A new study found that some foods such as olive oil, change the way in which it operates genes related to the occurrence of atherosclerosis, the scientists say that olive oil is rich in polyphenols compounds Polyphenols, a chemicals plant anti-oxidant and is responsible for the coloring of some plants. If olive oil can be a positive effect on triglycerides, and positively impact on the prevention of coronary heart disease.
The results of this study, which represents a breakthrough new scientific that the use of olive oil can have a positive impact on the fat (three-and cholesterol) and oxidation of DNA, the body's resistance to insulin (leading to Type II diabetes), inflammation of the nerves, and the emergence of cancer, tumor suppressor malignant.
As a result, scientists are advised to replace the oils used in food with olive oil that proves the benefits of science every day to its content of antioxidants and the renewed vitality of youth and give to man.

Reference in the Qur'anic verse: (and (20) And [We brought forth] a tree issuing from Mount Sinai which produces oil and food for those who eat) it was found that the olive contains materials Sabgh ....

The Qur'an referred to the active compounds found in olive oil, namely:
1 - the easy absorption of fat found in olive oil.
2 - material is processed plant compounds that give color and compounds called Polyphenols. The task of these compounds as anti-oxidant.
Allah says: ((20) And [We brought forth] a tree issuing from Mount Sinai which produces oil and food for those who eat) [Believers: 20].
Qur'aan: (grow fat) indicate the presence of fatty substances useful in the olive, because the mercy of God Almighty. The verse: (and eaters of the dye) refers to the importance of the dyes in the olive and its benefits to humans.
Therefore we can say that this verse contains a reference to the great importance of this nutrient and the benefits to the people, unlike the fat of processed science has proved harmful to humans, then praise be to God!

Ibn al-Qayyim described the benefits of olive oil in his Prophetic Medicine. He said that the characteristics of olive oil corresponded to the type of olives from which it came from; oil pressed from ripe olives was the better than oil from unripe olives. He also said that the older the oil, the more effective it was, and when olive oil was more beneficial when it was pressed with water.

Ibn al-Qayyim mentioned that all types of olive oil could soften the skin and delay whitening of the hair. He also said that the benefits of olive oil were many times greater than have been mentioned.

He gave some Prophetic Hadith on the benefits of using olive oil:

The Messenger (Sallallaahu alayhi Wasallam) said: "Eat olive oil and anoint yourselves with it, for it is from a blessed tree." (Tirmidhi At'ima, 43)

And also:

"Eat olive oil with your bread, and oil yourselves with it, for it is from a blessed tree."
(Ibn Maja, At'ima, 34)

By mentioning olives and olive oil in several places in the Qur'an, as well as Allah taking an oath by it, confirms its nutritional value which has been proved by medical and scientific research in the twentieth century. These Qur'anic references prove the scientific miracle of the Holy Qur'an which was revealed 1400 years ago as well as the miracles of Prophet Muhammad (PBUH) to whom the Qur'an was revealed; he said, "Consume olive oil and use it as lubricant and lotion, for it comes from a blessed tree ".

Many questions related to this issue come to mind, such as, why did Allah reveal this ayah in the Holy Qur'an? And why did He make the Prophet (PBUH) inform us about the olive tree, its fruit and oil? The answer to these questions is that Allah knows best in His all-encompassing knowledge; perhaps that one day, man will discover the benefits of olives and olive oil, making the Qur'anic ayah and the above Hadith witnesses to the fact that the Qur 'an is the Word of Allah.

The Vitamin E contained in Olives is the body’s primary fat-soluble antioxidant. Anti-oxidants help to strengthen the body’s immune system; reducing the severity of asthma, cancer, osteoarthritis, and rheumatoid arthritis, premature ageing, as well as delaying the effects of ageing. Olives contain compounds called polyphenols that appear to have significant anti-inflammatory properties. Imam as-Suyuti comments that in using olive oil as a balm, you fortify your limbs and as a result reduce inflammation.
Ibn Umar recorded the well-known hadith: “Use olive oil and anoint yourself with it, because it is ‘from a blessed tree.” (Bayhaqi)
The juice of the olive, otherwise known as olive oil, is a delicious source of antioxidants. This oil is monounsaturated, and it has a positive effect on the cholesterol level in our blood streams, by helping to reduce it. Monounsaturated fats are an important part of our diets. These oils act to keep cholesterol from sticking to our artery walls, and thus combating against diseases such as heart disease and strokes. Not only that, but they help to control blood sugar, a big plus in offering protection against Diabetes.

As regards to the Olive tree, Allah says:
وَشَجَرَةً تَخْرُجُ مِنْ طُورِ سَيْنَاءَ تَنْبُتُ بِالدُّهْنِ وَصِبْغٍ لِلْآَكِلِينَ
“And We created the tree which grows on Mount Sinai: it gives oil and is used as food also by those who like to eat it..” (23:20)
