How do you make your zobo, and do you refrigerate it, it should take more than a day before fermenting.

For a shelf-life of 3 weeks or thereabout, add a simple stock solution of 0.1 % sodium benzoate. This can be made by dissolving one pound of sodium benzoate in one gallon of water. One ounce of this solution per one gallon of the zobo beverage gives a concentration of about 0.1 % sodium benzoate, which is the recommended concentration for a non-carbonated beverage like zobo. Another option is to pasteurize(boil) the drink but this will lead to loss of nutrients.
