If I got your question well, you intend to manipulate an xml ducument by inserting and retrieving data from it constantly. The simplest API I can recommend for you, is jdom parser. It can help you automatically create an xml document, add elements, nodes and attributes. It also helps you delete and modify them too.

Here is a quick tutorial for you, if you able read java codes.
