I think because the market is an evening one. Most people who patronise suya sellers are daytime workers. So it only makes sense that the meat is kept fresh enough for after work hours.

But over here in Abj. Especially at Banex/Emab plazas, suya selling knows no time.

It's sold afternoons and evenings...

Meanwhile, people normally come back from work in the evening. Mai suyas tend to get more sales then. That probably one of the reasons it's usually sold at nights.
