Carrot is probably one of your favorite vegetables. Because we know that carrots are nutritious and good for our health, most of the time we serve this root vegetable to our kids, and we cut it into different sizes and shapes so it would look more appealing and edible. But why is a carrot so popular and why most people regard it as an ultimate health food?

Carrots are available on your local grocery stores all year round, but they are usually the freshest in the summer and fall. Carrots were first cultivated in Afghanistan. However, the original carrots were bitter-tasting, small, and purple or yellow in color. In the 16th and 17th, the Dutch grower developed and stabilized the root vegetable which makes them appear bright orange and long and sweet tasting.

Carrots are loaded with essential vitamins and minerals that are needed by the body. Nutrients in carrots include. 407.6% vitamin A, 20.1% vitamin K, 13.6% fiber, 12% vitamin C, 11.1% potassium, 0.5% manganese, 8.5% vitamin B6, 8.1% molybdenum, 6% vitamin B3, 5.7% folate, 5.3% vitamin B1, 4.2% phosphorus, 4.1% vitamin B2, 4% and 4% vitamin E.

In addition to this, carrots also contain beta-carotene a strong antioxidant that gives the carrot a bright orange appearance. When beta carotene is absorbed and digested in the stomach, it turned into vitamin A, which can help promote good eyesight. Other varieties of color such as the yellow, red, and purple carrots are packed with anthocyanin and lycopene, which are antioxidants that can give you a healthy heart and weight.

Health benefits of Carrots

The nutrient the root vegetable contains explains why it is considered a health food. But what are the health benefits that you can get by including carrots on your diet? According to research, the dietary carotenoids and antioxidant in carrots which prevent the free radicals from damaging cells may help reduce your risk of cardiovascular diseases and different types of cancer such as lung cancer, colorectal cancer, leukemia and prostate cancer.

Moreover, Duke Ophthalmologist Jill Koury, stated that consuming carrots may help fill the nutritional needs for vitamin A, hence it can prevent vitamin A deficiency, which can cause fast deterioration of the eye’s photoreceptors damaging the normal vision. Furthermore, you carrots may also help control the blood sugar, delay the detrimental effects of aging and boost the immune system.

Ways to eat carrots

Carrots are quite versatile, and it can be eaten in many ways. Most of the time, it is eaten, steamed, boiled, roasted or raw. When storing carrots, it’s best to keep it in the refrigerator on a sealed plastic bag. Make sure that you need to remove the greens attached to the carrot to prevent it from rotting fast. For health enthusiast and dieters, carrots are best added on salads, coleslaw, or bake goods like muffin and cakes.
