Ekpang Nkukwo is one of the most sought after delicacies from Akwa Ibom. Do you agree?



Prepared with both cocoyam and water yam, this meal is relished by many and considered one of the most healthy meals as it contains the basic classes of food.

The flavor and taste are heavenly mouth-watering and today we’ll be learning how to prepare this tasteful Akwa Ibom meal, below:

Ingredients:

1) 1kg Cocoyam, peeled, washed and grated
2) 100g Water yam (optional), peeled, washed and grated
3) Fresh Cocoyam leaves, Spinach or Pumpkin leaves
4) 500g Meat, Goat meat, Snails or Fish (optional)
5) 6 cups of Stock
6) 2 cups Hot Water
7) 300g Dried Fish
8 ) 200g Stockfish, slightly cooked
9) 3/4cup Crayfish
10) 2 cups of prawns or shrimps
11) Chilli Pepper to taste
12) 3 Maggi Cubes
13) Salt to taste
14) 2 medium sized, Onion bulb
15) 2 cups Palm Oil
16) 5 cups Shelled Periwinkle (optional)
17) 2tbsp scent leaf, chopped

Preparations:

1) Season and boil the meat to get out the stock
2) Cook the shelled periwinkle for about 5 minutes in salted water and wash properly
3) Pour the periwinkle in the pot to form a base
4) Add one cup of palm oil
5) Crush and sprinkle over 1 cube of maggi and about 1/2tsp of salt To the cocoyam and water yam mixture, Mix properly with your fingertips or with a wooden stick
6) Use the leaves to make small wraps with the cocoyam and water yam starting from one tip of the leaf to the other end
7) Make wraps until all the mixture is finished
8 ) Boil about 2 cups of water
9) Put the ekpang on fire and add the 2 cups of water and steam for about 5mins
10) Add the meat, dried fish and stockfish
11) Add the crayfish, chilli pepper, onions, maggi cubes
12) Add the stock and allow to cook for about 15mins on medium heat
13) Add the shrimps, remaining palm oil, scent leaf and salt to taste
14) Stir and slightly mash or just cut through with a knife
15) If it still isn’t properly cooked, add a little more water and allow to cook further on low heat
16) Serve and enjoy.

Note: Some species of cocoyam itch terribly so limit it to your palms when grating and wrapping or wear disposable gloves.
