this post is quite misleading information. on the contrary is quite healthy. by method by which one prepares egusi can either retain its health benefits or degrade it. as someone mentioned, plants contain NO cholestrol. the nutrition facts that you likely quote likely includes egusi soup and animal protein -like beef. i make vegan egusi with no meat and lots of vegetables. super nourishing and energizing. in one of the links below, the author considers it "the miracle melon". as you can see from the nutritional profile below. the egusi seed by itself is quite healthy. add greens and other vegetables and you have super healthy meal with lots of healthy fats, protein, low carbs and depending on the veggies probably lots of other nutrients.

the nutrition content of egusi looks more like this:

hmmm. here's a question, I was wondering if it's possible for egusi - the white stuff - to taste good without cooking it using palm oil/spinach....are there any alternative ways for cooking egusi?

So much misinformation.
Melon (excluding the fatty beef and unhealthy stuffs added) is the best thing that can happen to human diet. It contains no cholesterol (like all foods of plant origin), but it contains Phytosterols of which the body ends up assimilating just about 1% of it.
In addition to this, melon is low in carbohydrate and high in fibre contents when compared to other legumes, rich in vitamins (E, Niacin and Folic acid), minerals, essential amino acids, and essential fatty acids.

Please stop misleading people.
Melon seeds contain healthy oil and it is known to reduce cholesterol and keep the heart healthy.
Please go and do more research.
