fried!!? don't mind me, its the normal egusi soup we all know
there are so many ways to cook egusi soup, you can fry it dry,you can grind pepper tomatoes onion ,melon together using the big grinding machine cook, you can pound egusi with onion in a mortar to extract oil(controlling oil intake) and make balls before cooking

I prefer to fry to wet egusi*smile

ingredients
- grinded melon seed(egusi)
- pepper
- onion
- tomatoes
- beef
- cow skin(ponmo)
- grinded crayfish
- dry fish
- stock fish
- pumpkin leave (ugu)
- palm oil
- seasoning
- locust beans( if desired)

method of preparation
- wash meat, dry fish, stock fish put into a pot,slice onion into it season(salt,maggi, thyme and curry little if u wish) and put into a pot to cook
- grind pepper,tomatoes, and onion set aside
- wash and slice vegetable set aside
- wash cow skin thoroughly set aside
- put grinded melon into a bowl add little water and mix slice onion( if desire)
- put pot on the fire add palm oil, heat for a min do not over heat (bleach)
- using a spoon put the melon into the pot of oil
- fry as if you frying fish which you can't stir every min so it wouldn't scatter to maintain balls but watch carefully so it doesn't get burnt
- after frying for 15-20mins
- add grinded tomatoes and pepper into it and keep frying and stir so it doesn't get burnt till every trace of water disappears for another 10-15mins
- add little (stock)water from the boiled meat allow to cook for another 5mins
- add locust beans, grinded crayfish
- add the meat ,cow skin and remaining meat stock , leave to cook 5-10 min taste before adding salt and Maggi
- add vegetable cook for 2 mins and its ready

NB
- never add crayfish into melon while grinding if you want it to form balls
- you can add better leave, oziza leave and utazi, but in little quantity. love utazi smell
- yes I add tomatoes but very insignificant you wouldn't know until you are told
- you can add snail,shrimps, cow intestine, round about, towel(shaki) etc.
- you can boil grinded pepper and tomatoes till every trace of water disappear before adding then u wouldn't fry for long after adding to the frying melon.
