Most times we have over ripd plantain dat may likely go to waste. We can howeva make a snack out of it. I know it has a name but cant quite rememba it now. ingredients a) ova ripe plantain b)bakin flour c)blended pepper d) vegetable oil 4 frying mash d plantain wit a spatula ,add d bakin flour wit d blended pepper and mix with d plantain. Heat d oil and scoop in small sizes(deep fry) till golden brown . Serve hot. blended crayfish mite be optional. If u guyz enjoy it pls hala back.

@winnergal ikokore is made 4rm water yam and its not fried. Trust me i shuld know i am 4rm sagamu

~Aaaw your post took me down memory lane!I'm so sharing this memory w/ you all tongue. . .

~I call it plantain cake. . my mam had this regular lady she always bought plantains from,whenever Ma purchased plantains,the lady Mami Iye,use to have this big frying pot & the mixed ingredients on display. . . did i mention the roaming flies grin And a very obvious gems invested hand that i never observed her washing after collecting money or before diping her hand in the ingredients,then fry grin


~she'd fry those Yummy spicy lil Not-so-hygenic-delights. .wrap a couple of freebies for me or my siblings! My Mam wasnt best pleased of her generousity. . Rule no2 "No Street Food Consumption" It will be taken away fr om us immediately we get in the car so i'd always try to get a couple of bites feeling me mams eyes boring into me. . but I wudnt pay no mind b/c i loved it!They were very popular too,sometimes i will be looking forward to have some but it will be finished by the time we get there!!

The OP gave a recipe.  .  .i gave a suggestion.  All overripe plantains don't have to be made in only one recipe.
That's why it's the food section.

~IN some cases i suppose,but the "Plantain Cake" is the same recipe as the recipe given by OP. . .for instance. . . .SPC's post. . .we call "Rice Bread" but different ingredients grin

Yes it is called Ukpo Ogede or Plantain Moi Moi http://www.allnigerianrecipes.com/plantain/plantain-moi-moi.html. The recipe is very easy to make. All you need is - over-ripe plantains, unripe plantain flour, palm oil, crayfish, onion, pepper, salt and Maggi/Knorr cubes. All these are blended together and put in foils, uma leaves or plastic bowls and cooked in a pot like beans moi moi.

I tried d recipe didn't turn out rite- I got burnt mashed plaintain
Btw I 4got to add flour

I tried the recipe, it didn’t come out well, I forgot to add nutmeg I ended up using it to eat rice.

This is what I used.
Blended paper
Red oil
Onions

Maybe my ingredient made it not to come out well. Can some one advice me. Do I need to add flour to fry?

I will repeat the frying

I tried it nd it wz amazing. Mashed ripe plantain+baking powder+lil flour+peper n crayfish+tiny cut onions+lil salt n seasoning cube den fry n hot oil . Turned out gr8 n 2 tink I wld thrown dem away
