Efo riro is a rich and healthy vegetable soup made with spinach (efo tete or efo shoko), this soup is well known for its savoury taste and richness. Efo riro simply means vegetable soup, it is the Yoruba version of edikanikong soup; it can be served with any kind of starchy bolus (eba, fufu, pounded yam or semolina.


Efo riro ingredients

1. 1/2 kg of assorted meat (beef, cow tripe)
2. kpomo (cow hide)
3. Pieces of dried fish
4. 1 medium size stock fish
5. 400g efo Tete or efo shoko (spinach, green amaranth)
6. 7 pieces of red bell peppers( tatashe or shombo)
7. 1 big red onion
8. 2 table spoons of ground crayfish
9. 1 table spoon of locust beans( iru)
10. 2 cooking spoons of palm oil
11. 2 seasoning cubes
12. 4 pieces of scotch bonnet peppers
13. Salt to taste
