Due to all the health warnings on using plates, aluminium foils and tins, I decided to bake moi moi in the oven with a Petri dish and it came out fine.

Ingredients

Black eye peas
Red pepper
Scotch bonnets
Onions
Garlic
Ginger
Stock
Tomatoes
Salt
Sun flower oil
Salmon
Mixed sea food

I also used fresh oregano and basil

Blend all your ingredients and pour in a bowl
Add your stock and sliced onions and oil

Pour into the baking dish and scatter the sea food at the top by tapping the dish on the worktop this will go to the bottom of the dish

Cover with foil and place in the oven

Place a pan of water in the oven along side

Slow bake for about two hours until it’s cooked

I tried this over the weekend and it turned out very well. Although in a very small quantity and I jampacked it with sea food and prawns, it turned out very well. Thanks OP your no 1 fan as always. grin

carcinogenic effects of the reaction of the plastic and
water.


I've never eaten this kind of oven-baked "moin moin."
I would love to try it out soon by following the recipe
using a petri-dish.

On the other hand... just a quick one:
The correct spelling is "Moin Moin" [Not moi moi].
"Moin Moin" without the letter "Y" is actually a later-day
contraction of the classic spelling "Moyin Moyin."
Moyin Moyin [Mo Eyin]... "Eyin" means teeth in the
Yoruba language.

Moyin Moyin [Mo Eyin] means in Yoruba "to stick/gum
to the teeth."
