I appreciate all the wonderful contributions on the various topics raised. I am a small time caterer hoping to grow big someday, I would however need some advice in buying an oven. 1. Are the locally made ovens as good as the imported ones, 2. Whats the advantage of the imported ones over the locally made ones. Thanks.

The type of oven you use depends on the volume of baking you do> The locally fabricated ones work as well as the imported ones and they are especially useful for wedding cakes and large sized cakes, cause they give you the ability to bake all your tiers at once. I have a locally fabricated industrial oven and it serves the purpose just fine.
