Pls who can help me with the recipe of blacksoup. I checked the internet but I can't find the recipe.

INGREDIENTS:
Bitter leaf – Blend to a smooth paste
Pumpkin leaf – Blend to a smooth paste
Fresh Palm fruits (optional) – Boil, Marsh, dilute with water and drain till chaff is clean
Fresh pepper – Blended
Onions – blended
Cray fish – grinded
Fresh fish of choice (Croaker, Porpoise, Cat fish, Mackerel etc)
Beef - Boiled - Qty desired
Pomo (Cow skin) – Boiled – Qty desired
Stock fish – Boiled - Qty desired
Seasoning cubes
Salt to taste
Palm Oil - optional


PROCESSING
1. Wash bitter leaf in sufficient water and drain to remove bitter taste
Note: Not completely, so as to retain a little tinge of bitters.
- Blend to a smooth paste
2. Rinse Pumpkin leaf normally without squeezing out the nutritional content.
- Blend to a smooth paste
3. Boil palm fruits for 25mins or till tender and drain off the boiling water.
- Marsh fruits and dilute with 1litre of water and drain the sauce.
- Repeat as desired until chaff is clean be careful not use more than 2litres.
Note: Descretion is needed here as the quantity of fruits determines the volume of water required.


METHOD
1. Heat palm fruit sauce for about 20mins or until slightly thickened.
2. Add beef, Pomo, stock fish and the fresh fish to boil for 2mins.
3. Add the Cray fish, the bitter leaf paste, cook for 6mins and add pumpkin leaf paste and stir.
4. Add Palm Oil if desired and cook for 5mins
5. Add seasoning cubes and salt to taste, stir and cook for 2mins
6. Congrats, you’re ready to go.

Wow, u just make me to remember GT Plaza Food. Black soap and pounded yam. U can eat this soap there. I do love it in GT with big fish.

Please change "eshan" to Esan. That is the correct spelling and pronunciation[ay'san]. Thank you.

Brilliant post. But a few observations-
1. Palm oil is essential, not optional.
2. It's okay to say palm fruit is optional, but you will notice a striking difference if you leave it out. In fact, my mother won't accept the bowl from you if you did!
3. I agree with this:
mogbomoya: Replace pumpkin leave with scent leave!
Or, better still, leave that out. The bitter leaf is good enough. But, I guess this is a matter of taste, so pumkin or scent, you are still right.

The binis use bitterleaf.

BTW, that recipe is not fully my work, I modified it to have my own recipe.

Bitter leaf, effirin, even cassava leaf cab be used as well. its not only esan people its a delicacy of Edo people. am from ora and we eat it a lot.

I schooled in AAU and back then i used to see fellow students grind the leave with little palm oil in the marker square.
Just like you said, the leave is
very wide and the soup tastes really nice sha if well cooked.
I dont think Bitterleaf is part of the ingredients for the soup except for the BENIN people like someone here stated.

this...not sure of the botanical name, but the igbos call it Uziza.

Uziza is different from the broad leave, I am from ujemen in ekpoma, I don't know the English name.
My mum taught me the soup and I have passed it on to my daughters and sons.
The menu above is OK, if u use palm fronds enough, u don't need palm oil again.
Also, never cook this soup without local spices , it's missing from the menu above, or u can ask women in the market to give u.
Alternatively u can use grounded ready made pepper soup spices.
