I also know this traditional sauce common among the delta and Benin people called owo,yellowish sauce made out of potash and palmoil and some other ingredients involve but the delta people makes it differently.it goes well with yam too,very delicious.Please any delta person in the house?

You add the sugar to the water before cooking, along with the salt. Makes for a nice dish. You have to use a lot of sugar though, to get the taste. I also like slicing yams very thin, instead of thick and chunky. The thinner slices are easier to dice and eat. But thicker slices are great for soaking in palm oil with a sprinkle of salt.  as for what goes with yam- just about anything. Eggs, garden eggs, fish sauce, pepper and onion sauce,palm or veggie oil, you name it.

THE FIRST PART (1)Yam,salt or sugar,water.Put water on the fire and add enough sugar,peel the yam(preferable cut into smaller bits)wash and add to the boiling water,the water should not be much so that the water drys up when the yam,so people sieve the water out but is better for the water to dry with the yam. THE SECOND PART (2)Garden eggs,vegetable oil,salt,tomatoes,pepper(if the unripe ones are available,good)crayfish,fish,fresh shrimps,knorr,onions. put water on the fire,add garden eggs,put tomates,pepper,crayfish in a clean rubber bag,add to the garden egg on the fire,allow to cook.Peel the fresh shrimps,clean the fish.when the garden egg is cooked remove and put in cool water and peel of the skin along with the tomatoes,put the peeled garden egg,pepper,peeled tomatoes and crayfish in a bowl and mash.Put oil on the fire,add dice onoins,mashed crayfish,mashed tomatoes,mashed pepper,fish ,shrimps,salt and knorr and allow to cook,then add mashed garden egg and stir,and allow to cook for like 5mins then is ready to be serve with the yam.This is way i like it,others prepare theirs differently.

nice. Also, the Nigerian variety of garden egg tastes better than the long purple American one. At least when eating it with yam. The taste is stronger and better.

I know you asked for delta people, but I am bini and know exactly what your talking about. Owo is mostly eaten with plantain, and it's great with yam. I remixed it and did it my own style by having it with rice. It was soo delicious. I had it this morning. Yummy.

@lady,owo with yam is indeed delicious,but this remix of yours i will try it and see how it goes.But the remix,is it after making the owo,then add with cooked rice or what?please i will like to know.Thanks
