125g sifted plain flour
1 beaten egg
300ml milk
Oil for frying

1. In a large bowl sift the flour in and make a small well in the middle. Add the beaten egg into this well then, whilst constantly sirring, slowly start adding half the milk. Add the rest of the milk and beat thoroughly, until the mixture is smooth.

2. Heat a small frying pan and add a small amount of oil. Pour a small amount of your pancake mixture into the pan, tilting the pan to make sure the mixtre covers the bottom.

3. Cook for around 1-2 minutes, or until bubbles start appearing and the underside turns golden. Loosen the edges of the pancake with a spatula, then flip it over and cook the other side for another 1-2 minutes, or until it turns golden.

** also use same mix to make yorkshire puddings!
