Scientists Concoct Chocolate That Won't Melt

Chocolate is not widely consumed in the tropics, even though that's where most of the world's cocoa is produced.

The reason: It's too hot.

High temperatures in countries like Nigeria reduce chocolate into a sticky, gooey mess.

Food scientists have been trying to remedy this situation for decades, and now researchers in Nigeria believe they are close to achieving the holy grail among chocolate manufacturers: a heat-resistant chocolate that actually tastes like chocolate.

Melting point

Most brands of chocolate melt at temperatures between 77 to about 91 degrees Fahrenheit.

S.O. Ogunwolu and C.O. Jayeola, food scientists at the Cocoa Research Institute of Nigeria, have mixed cornstarch with cocoa to produce a heat-resistant chocolate that they say compares "favorably with conventional milk chocolate in terms of color, taste, smoothness and overall acceptability."

The starch acts as a chocolate thickener and prevents the outflow of cocoa butter—the natural fat of the cocoa bean—when the heat is on. The researchers found that using 10 percent starch was ideal and produced a product that was comparable to milk chocolate in taste tests.

The new concoction stays firm up to 122 degrees.

May God continue to give Nigerian people wisom so that they can develop that country and the rest of African. This is just the beginning and they will be more things that will happen. I love hearing these kind of news.

I'm thrilled.This is the kind of news the West hates to report and if it does it scoffs. When Nigeria sent it's first satellite into space,an influential London magazine said 'Boon or boondoggle?'

Don't worry soon Nigeria will starting making their own malaria vaccines. Don't worry God is alive and anything is possible if we use our brains wisely and also for developments. May God continue to bless Nigeria and the rest of the world.

we have aids, tuberculosis, malaria killing our people and what they do is mix eba and cocoa. I didn't have to read the details to know that they had to mix some starchy substance with cocoa. Besides they will not export it. it is not economical for any countryh in the tropics to import 10% starch and cocoa. they can mix it in thier country, therefore they will buy the rights.
they need to set up well funded  labs to research novel drugs or vaccines for diseases that kill peoplpe in the tropics.

That is why scientists must move beyond the realm of inventions and think about their applications. If I start manufacturing and selling the special chocolate in Nigeria, I will be able make my money in spite of the noisy critics, as long as there are people who find the product tasty and affordable.  Here is chocolate that won't need any refridgeration!

thankfully there are more sensible nigerians on here than foolish ones and they can see how great this is. development must come from all angels and this not only will open up chocalate sales to the tropics thereby oubling its potential market, but also raises the confidence of nigerians to do things.

this is non oil and shows we can create 'oil' with our brains.

for those whining about aids and malaria, what makes you think we aren't working on those things also?

No one is whinning and no one is foolish. we just have different views on how things should be done or proceed. 6million Nigerians have HIV, 1/3 of the worlds population have TB,3 million People die every year from TB, resistant strains of TB are popping up. And i am whinning when 70% of nigerians live in poverty and cannot afford a few luxuries including chocolate. I am sorry for whinning.
And for the research, how many publications on TB, Aids and malaria do nigerian universities produce each year in scientific journals?

Hellooooooooooooooo, all those dissing corn starch , whats the difference from high fructose corn syrup which is used in soooooooo many products to replace sugar; from your coca-cola to powerade to salad dressing to your pizza sauce to your salsa at Taco Bell to that cookie you buy at Subway to the potato salad from KFC to the croissant from ABP.

But then you wouldnt call that Akpu.  Right? since it was not created by Nigerian scientists who are sincerely trying their best to inprove the potentials of the country in their various fields.

So I guess everyone in Nigeria should be a scientist , looking for a cure for HIV/AIDS. My friend, a society is built through the contribution of many fields. Without the arts in Europe, do u think Europe would be that developed. Yes, we need these health interventions but does that mean the engineering profession, the banking industry etc should all stop working. Its not like the Nigerian govt gave them a grant to make this chocolate while they didnt give AIDS and malaria researchers anything. These guys, in their crappy lab, somewhere in Ibadan, Nsukka or somewhere did this themselves.

And did you ever search pubmed and discovered the thousands of publications by Nigerians on TB, AIDS, malaria. I bet not! No, you just whine in an un-intellectual manner.

Point is, you can have your opinion about how things should proceed in Nigeria but that is not the response to a post titled "Nigerian Scientists Create Unmeltable Chocolate".

That is why we don't operate a command economy anymore.  In a command economy, each person has to convince the government that his project is worth pursuing.  A command economy is a wasteful economy.

In a private economy, I can pursue my chocolate research and you can pursue your HIV/AIDS vaccine research.  I can then use the money I make from my chocolate to buy your vaccines for the poor.  Everybody wins.

i know nigerians contribute to pubmed because i am one of the contributors when it comes to tuberculosis.  I never said nigerians do not contribute to those journals, i said nigerian universities. if you look under those nigerian names you will see various international universities. When was the last time a Nigerian Universities research was published in Nature or Science?
Kudos to those scientists that worked in the antideluvian labs but at the end of the day this conditions limit their abilities. Nigerians are very smart but they cannot reach their potential under the current system. this scientists could have come up with a genetically modified cocoa seed that contains more nutrients and has a greater yield. But they have to make do with UNMELTABLE CHOCOLATE.
When other countries with the assistance of nigerians are publishing breakthrough research in areas that affect human kind, those in nigeria  are heralding unmeltable chocolate?

PS. NO one is in unintelligent, we have various views on how things should be done. I know we are all passionate about our views but that shouldn't make us call each other names.

BBC: Non-melt chocolate for troops
A recipe for unmeltable chocolate has been invented by pupils in the south Wales valleys as a special treat for British troops serving in Iraq.

the Year 10 classmates set about making a recipe for heat-resistant chocolate by adding glycerine to the mix.

Their efforts in the kitchen have won them an award from a national science competition.

The pupils spent more than a year researching and testing the product in the lab during their lunch breaks, before finally coming up with the perfect recipe for unmeltable chocolate.

By adding glycerine, the chocolate does not melt until it is in the mouth where the glycerine dissolves and the chocolate softens.

I was jobless enough yesternight to do a search on pubmed. So I typed in Nigeria and I got 15178 hits. I wanted to know if these were Nigerians in International universities so I downloaded to endnote and started checking the addresses. I must have run through about 2000 before I fell asleep but they were Nigerian researchers in Nigerian universities.

Nobody is saying anyone is un-intelligent but do we have to knock down everything so hard.

A Phd candidate in Nigeria does something that a high school student does somewhere else or improves on it, and we go like "is that what they can do?" Yet we say the country is not developing. Little beginnings make great things.
