I love cooking. I can make most, if not all of Caribbean Recipes.  Why don’t you come on in and have a drink and bite to eat?  Enjoy the feeling of peace.

Salt fish Cakes

1 lb Salt fish
1/2 lb flour
1 1/2 tsp baking powder
1 1/2 finely chopped onion
1 1/2 chopped hot pepper
Thyme and Scallion
Oil for deep frying

Method

Soak fish overnight. Cook until tender. Drain
Remove bones from Salt fish (if necessary) Shred salt fish finely. Add flour, baking powder, onion and hot pepper – mix well
Drop by spoonfuls into hot oil and fry until golden brown

Salt fish and whole wheat Johnny Cakes

Stewed Salt fish

1 lb saltfish
1 onion
1 sweetpepper
1 peg of garlic
4 whole cloves
3 table spoon olive oil
2 table spoon tomato paste

Soak salt fish over night
cook in fresh water and drain
Bone salt fish (if necessary) and flake salt fish
Pour oil in frying pan and saute onion, sweetpepper,garlic, cloves and tomato paste
Add saltfish with enough water to cover
simmer untill fish is done
Serve with Johnny cakes for b/fast


Whole Wheat Johnny Cakes (Fried Dumpling)

4 cups whole wheat flour
2 teaspoons baking powder
1.5 teaspoon salt
1/2 cup butter or margarine
1/2 cup cold water
Vegetable oil for frying

METHOD:

Mix dry ingredients together.
Add water a little at a time and knead dough.
Dough should be soft but not sticky.
Pinch off pieces (golf ball size), roll into a ball or flatten.
Heat oil in pan.
Put each dumpling in pan and fry on each side.
Remove from pan when each side is golden brown.
serve with salt fish for b/fast

Whole Baked Rosemary Flavored Chicken

1 whole chicken (wash and clean chicken)
1 small onion (chopped)
3 tablespoons dry rosemary
A head of garlic (chopped)
Salt and pepper to taste
Scallion and thyme
6 whole cloves

Method

Combine salt, pepper, garlic, scallion, thyme, cloves, onion and rosemary in a bowl
Rub inside the chicken with mixture
Rub outside the chicken with mixture
Place chicken in oven (350 degrees) until chicken is cooked and golden brown.
Cooking time will vary a bit depending on the size of the bird

Green Plantain Porridge

2/3 cup chopped or grated (coarsely) Plantain (use blender)
2 cups water
1 1/4 cups Half and Half (or Milk)
1/2 tsp salt
Sugar to taste
Vanilla flavoring (2 drops)
1/4 tsp Nutmeg (ground)

Method

Bring water, milk and salt to boil.
Add vanilla and nutmeg
Add Plantain slowly stirring constantly. 
Lower heat and stir for 3 to 4 minutes (Remove lumps if there are any)
Simmer gently until the mixture is almost smooth (about 7 minutes)
Remove from heat
Sugar to taste
Serve with a glass of Orange Juice

* You may add more milk or water if thinner porridge is desired

LOL @soupy. Yes, I eat my porridge by itself.  For others I’ll make the porridge thick.  However, I like my porridge "runny" or as you call it "soupy" Grin Grin Grin (ok soupy is funny. . .real funny)  I am going to use soupy from now on.

Oxtail Stew

2 lbs. oxtail
1/4 cup oil
5 cups water
2 tomatoes, chopped
2 onions, chopped
2 clove garlic (minced)
Scallion and Thyme
1 small hot pepper
Salt
*gravy browning (to darken if desired)

Method

Season oxtail overnight
Brown oxtail in oil. Drain the oil and add 4 cups of water and boil until tender. (add more water if necessary).
Add tomatoes, onions, garlic, thyme, scallion, and salt.
Stir for a few minutes and let simmer until thick.
Add remaining water. Add hot pepper. *gravy Browning.
Lower heat, simmer until gray is thick.
Best served with rice and peas.

Macaroni and Cheese Pie

32 ounces elbow macaroni
3 eggs
3 cups milk
4 cups shredded cheddar cheese
1/4 tsp salt
1 small onion (chopped)
Thyme
I “head” Scallion (chopped finely)

Method

Put macaroni to boil in lightly salted water
Cook for 8 minutes. Rinse under cold water and drain.
Add onion, thyme and scallion to macaroni.  Mix well
Beat egg, salt, milk and a dash of black pepper together.
*(spray baking pan with Pam or slightly grease pan)
Pour half of the cooked macaroni into baking pan
Cover macaroni with half of the cheese.
Pour remaining macaroni into baking pan (leave little room at the top)
Cover with remaining cheese
Pour egg mixture over macaroni.
Cover and place into oven (350 degrees) Remove cover after 5 minutes
Bake until the top is golden brown

Cheese Omelet
(Serving for 2)

4 eggs
2 slices Kraft (or your brand choice) cheese
1 tablespoon finely chopped onion
1 tablespoon finely chopped scallion
1 tablespoon finely chopped sweet pepper
Salt and ground black pepper to taste (if desired)
2 tablespoons butter

Method                                                                                                                                                                                                                                                                     
Beat eggs, onion, scallion, sweet pepper in small bowl with folk until yolks and white are well mixed
In a frying pan melt the butter over moderate heat.
Pour in egg mixture and spread it out evenly (reduce heat to low)
Cook until edges of omelet begin to get firm
When the outside edges have firmly cooked, flip the omelet and cook on the other side (30 seconds)
When center of omelet is almost firm – place slice cheese in the center of the omelet
Take spatula and fold omelet in half, making sure to cover the slice cheese
Cook for 30 seconds until lightly browned and slide it onto your plate

Baked Pink Salmon Fillets

4 pink Salmon fillets
4 thin slice lemons
1 tablespoon lemon juice
1 Onion  (sliced)
1 Red sweet pepper (sliced)
1 Green sweet pepper (sliced)
Thyme
4 Cloves
Head of garlic (Chopped)
Salt
8 Baby carrots (sliced)
2 tablespoons Jamaican Jerk seasoning

Method

Wash and season Salmon fillets with Jerk Seasoning.  Add salt to taste
Pour lemon juice into ungreased baking pan
Place salmon fillets in a baking pan
Place 1 slice lemon on each salmon fillet
Place onion, sweet pepper, thyme, garlic, carrots, and cloves on Salmon fillets
Cover and bake (350 degrees) for 20 to 25 minutes or until fish flakes with fork

Create your own Seasoning Blends.  This is wonderful to give as gifts any time of year.  You can even make arrangment with local restaurants and sell them

Ingredients:

Onions, Garlic, Scallion, Thyme, Hot Pepper (be careful), Cloves, Sweet peppers, black pepper, celery, oregano and parsley

Method

Put all ingredients in the blender, place lid on blender and blend
Pour into sterilized jars. Cover tightly. Refrigerate.

*I use this to season my rice or by putting a light coating of butter on a fish, then  covering it in the spice blend.

Meatballs

1 Pack Ground Turkey (20.8 ozs)
1 egg
1 tablespoon chopped onion
1 tablespoon chopped scallion
1 tablespoon red sweet pepper
Salt and ground black pepper to taste
4 tablespoons Chicken Broth
4 tablespoons condensed milk
1 ½ tablespoon Tomato Sauce
1 tablespoon breadcrumbs
1 tablespoon grated Parmesan cheese

Method:

In a large bowl put onion, milk, chicken broth, scallion, sweet pepper, salt, black pepper, parmesan cheese and bread crumbs.  Mix well.
Shape meatballs to desired size and place on a broiler pan
Broil until outside is slightly brown on one side and then turn and broil the other side.
When done, add to spaghetti sauce and simmer at least 20 minutes.

Oatmeal Raisin Cookies
Recipe by:Karoline Boehm Goodnick

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 cup (2 sticks) unsalted butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 cup dark raisins
 Extra granulated sugar (for sprinkling)
1. Set the oven at 375 degrees. Line 2 baking sheets with parchment paper.

2. In a bowl, whisk flour, baking soda, salt, nutmeg, and cinnamon.

3. In an electric mixer, cream the butter with the granulated and brown sugars on medium-high speed until light and fluffy. Scrape down the sides of the bowl occasionally.

4. Beat in the eggs, one at a time, followed by the vanilla.

5. With the mixer set on low speed, add the flour mixture until just incorporated.

6. Remove the bowl from the mixer stand. Stir in the oats and raisins.

7. Drop batter by the heaping teaspoonful on the baking sheets, setting the mounds about 1 1/2 inches apart. Flatten slightly and sprinkle with granulated sugar.

8. Bake for 15 minutes or until the edges are light golden but the centers are still pale. Cool on the sheets for 1 minute, then transfer to wire racks to cool completely. Store in an airtight container for up to 1 week

Caribbean Vegetable Lo Mein
(NFL Party - 2/1/08)

1 lb. Lo Mein noodles
1 can (15.5 oz) mixed vegetables
2 tablespoons dark soy sauce
1 tablespoon sesame oil
1 tablespoon light soy sauce
1 tablespoon sugar
1 clove garlic (chopped finely)
Salt and Black Pepper to taste
¼ cup Olive oil
1 clove crushed garlic
2 tablespoons scallion

Method

Boil Lo Mein according to package directions. Wash with cold water. Set aside in large bowl. 
Add to Lo Mein, mixed vegetables, soy sauce, sesame oil, sugar, garlic, scallion and salt and black pepper to taste.  Mix it all together.

In a large frying pan, add Olive oil.  When it is hot, fry Lo Mein - 3 to 5 minutes (turn heat down to medium)

Chicken Curry Flavored Soup

1 sweet potato
1 Irish Potato (cut in 4 pieces)
I Christophene (cup in 4 pieces)
1 peg garlic
1 small onion (sliced)
1 Chicken leg (cut into 4 pieces)
1 tablespoon, thyme, scallion
¼ pound Red Beans
¼ lb Pumpkin (cut in 4 pieces)
2 cloves
4 Baby Carrots (diced)
2 teaspoons Jamaican Hot Curry Powder
Salt to taste
Dumplings*

Method

Put Red Beans to cook.  When beans are almost cook add chicken (cook for 10 minutes) and salt.  Add potatoes, christophene, pumpkin, carrots, garlic, onion, thyme,scallion and cloves. Bring to boil then add curry and dumplings.  Reduce heat and simmer gently until all ingredients are tender and dumplings cooked

Dumplings*
4 tablespoons flour
½ teaspoon margarine
¼ teaspoon salt
Add flour, margarine and salt together and mix with a spoon.  Add enough cold water and mix dough until stiff. Cut dough into small pieces and add to soup

Girl, I had the weirdest, weirdest, weirdest dream.  As God, Allah and Buddha who ever up there. . . .are my witnesses. Grin Grin  Last night I dreamed Mukina2 and iice (no face just their bodies) came to my house and held me hostage.  They insisted that I cook a dish naming it Nairaland Special.

For fun, I am going to cook the dish today and post it.  I want you all to know why those two beat the living day light out of me in my dream.

Before I start cooking the dish, let me tell you about my dream.  Mukina2 and iice came to my house dressed like soldiers.  They had about 5 guns each, grenades, bazookas and a time-bomb.

Mukina2:  “Start cooking the dish now, epi”
Epi: “No”
Iice:  “Mukee, let’s kick her ass now.  I’ve been waiting for this

Folks, those two beat the crap out of me – kicks, boxes, head butts, Mukina2 even tried to put me in the sleeper.  When they were done with me, I was on the floor helpless.

Mukina2: “epi, I say start cooking nowi” – attached the time-bomb on me (set for 90 minutes).  Well, after 30 minutes of torturing I started to cook

Then for some strange reason, Shaz and Mohawchic showed up in Ninja suits and challenged Mukina2 and iice.  Out of no where Mukina2 pulled a sword and cut off Shaz and Mohawchic hands.  She and iice grabbed the Nairaland dish and left the bomb on me ticking.

I woke up screaming “somebody help me”

I don’t know these ppl but they were in my dream.   Couldn't see their faces, just bodies. u know what this dream mean Huh

Chicken Stir-Fry  Inspired from my weird dream Grin Grin

Ingredients

4 boneless skinless chicken breast halves
3 tablespoons cornstarch
2 tablespoons soy sauce
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
3 tablespoons cooking oil, divided
2 cups broccoli florets
1 cup sliced celery
1 cup thinly sliced carrot
1 small onion, cut into wedges
1 cup water
1 teaspoon chicken bouillon granule

Directions

Cut chicken into 1/2 inch strips; place in a bowl.
Add cornstarch and toss to coat.
Combine soy sauce, ginger, and garlic powder; add to bowl with chicken.
Refrigerate for 30 minutes.
In a large skillet or wok, heat 2 tablespoons oil; stir-fry chicken until no longer pink, about 3-5 minutes.
Remove and keep warm.
Add remaining oil; stir fry broccoli, celery, carrots, and onion for 4-5 minutes or until crisp-tender.
Add water and bouillon.
Return chicken to pan.
Cook and stir until thickened and bubbly.
