Hello Badriyyah

Here is a pic of the Spagetti Auflauf.  Just 2 changes

*fried sausage instead of cooking it
*Sprinkle some bread crumbs on the top

Oh a professor recommend that u try it with a pie crust bottom.  See his comment below

" when i went to Canada my then girlfriends roommate made something like this. except he actually put it in a pie crust bottom it was delicious."

Mango Salsa
Recipe by Chef Tommy

1 mango, peeled and diced
1 avocado, peeled and diced
4 tomatoes, peeled and diced
1 jalapeno, diced (with or without seeds)
1/2 cup fresh cilantro, chopped
1/4 cup red onion, diced
1 garlic clove, peeled and diced

Drizzle with:
2 tablespoon olive oil
2 tablespoons lime juice
In a large bowl, combine the first set of ingredients. Drizzle with olive oil and lime juice. Stir to combine. Season with salt and pepper. Serve with tortilla chips

*This took me less than 10 minutes to make it and its soo good.  It's mango season, so make use of them

Cheesy Bisquit, saltfish patties (soft and flaky) and baked jerk shrimp

Cheesy buttermilk buiscuit

20 oz all purpose flour
1/2 tablespoon salt
1 oz sugar
1 1/4 oz baking powder

1/2 cup or 1 cup of cheese (your choice how cheesy u want it)

7 oz butter (make sure butter is cold)
13 fl oz buttermilk(use volume cup)

method

mix all dry ingredients together
cut the butter in 1/2 cubes
fold butter in the dry and with your finger tips break the cubes into pea size
Add cheese
fold in the buttermilk (pl. do not overmix)
Lightly flour a clean surface and lay dough out
With rolling pin press down to approx. 3/4 -1 inch in thickness
cut circles with a biscuit cutter
Place biscuit on a lined sheet pan
bake 15 to 18 mins (375 degrees), until risen and golden brown


If you don't have buttermilk, try this as a substitute

3/4 cup of milk
1 table spoon of lemon juice or white vinegar

method

Add milk to lemon juice/vinegar and let stand for 5 mins

Blueberry Muffin

Dry ingredients
9 oz all purpose flour
1 tablesppon baking powder
1/4 teaspoon salt
3.5 oz sugar

wet ingredients
2 eggs
8 oz milk (use volume cup)
4 oz butter (use volume cup)
1 teaspoon vanilla extract
1 teaspoon lemon zest (grated lemon skin)

4 oz blueberries

Method

Combine all dry ingredinets in a bowl and stir
combine all wet ingredients in a separate bowl and whisk
Pour wet into dry and fold then add blueberries (mix for about 2 minutes, do not over mix)
Put into muffin pans and sprinkle sugar on top b4 baking

Making Eclairs (plain and with chocolate Glaze)

16 oz Water, Milk (half milk/half water)
8 oz butter
1 tsp salt
12 oz bread flour
1lb 4 oz eggs

Method

Combine the liquid, butter and salt in a pot and bring to a full "rolling" boil
Remove the pan from the heat and add the flour (stir quickly)
Return pan to heat (lower fire) and stir until the dough forms a ball and not sticking to the sides of the pot
Transfer dough in a clean bowl (mix with hand) or into a mixer - mix until dough is cool
Beat in eggs a little at a time.  When all the eggs are absorbed, the paste is ready
Line parchment paper in sheet pan and pipe approx. 2cm bulbs (Cream puffs) or 2 in long (Eclairs)
At first, bake for 425 degrees for 10 mins then lower heat to 375 degrees until well browned and crisp

Chocolate Glaze

10 oz Heavy cream
2 oz sugar
2 oz corn syrup
12 oz Bittersweet chocolate

Method

Combine heavy cream, sugar and corn syrup in a pot
After mixture comes to a boil add chocolate
stir until chocolate is melted, then transfer to a clean bowl

*You can use the same method to cover doughnuts or any pastry of your choice

Pastry Cream for Eclairs

16 oz milk
2 oz sugar
1.5 oz egg yolks
2 eggs
1.25 oz cornstarch
2 oz sugar
1 oz butter
.25 oz vanilla extract

In a pot add milk, the first 2oz of sugar and place on fire (just scald the milk)
In a bowl, add eggs and yolks then whisk
Add second part of sugar - whisk
sift corn starch and whisk until no lumps
Add some milk from the pot into the bowl and stir
Then transfer what's in the bowl into the pot and place back on stove (lower fire)
Stir until thicken.  When thicken, mix faster
Remove from stove and place in a sheet pan with plastic lining.  Cover with plastic and place in refrigerator for 30 mins
* you can use whip cream as a filling

Inserting Pastry Cream into Eclairs after baking

With a knife make one hole in cream Puff and two holes in Eclairs (one on each end)
Fill pastry bag with pastry cream and insert cream into pastry puffs/Eclairs
Dip the tops of the Eclairs in chocolate Glaze or chocolate fondant.

Enjoy!

Homemade Ginger Beer

Ingredients

5 oz shredded/grated ginger
1 tablespoon rice
8 cups water
1 tablespoon lemon juice
1/4 teaspoon almond extract
Sugar

Method

In a large clean bowl add water, ginger and rice
Let soak for 8 hours or overnight
Strain the ginger mixture
Add lemon juice
Sweeten to taste
add almond extract
Refrigerate until ready to serve
