Scalloped Potatoes (recipe attached)

With a twist:-

For coloring, I eliminated the cheese and added paprika instead. 
I used the ingredients from the recipe to make the sauce on the stove.  added oregano, garlic, onion and parsley for a better flavor

Sauce

•2 tablespoons flour
•1 teaspoon salt
•1/8 teaspoon pepper
•3 tablespoons butter
•2 cups scalded milk
finely chopped garlic and onion
1/4 teaspoon of oregano and parsley

tannia fritters

tannia (grated)
flour
scallion (finely chopped)
thyme
red sweetpepper (finely chopped)
salt and pepper to taste
milk
oil for frying

method

grate tannia
add other ingredients to grated tania
Heat oil in a shallow pan and drop spoonfuls of the mixture into the oil, fry till golden then turn and do other side, drain on paper towels

Liberian Okra Stew  (SeanT's recipe).  With SeanT's permission, I prepared this dish and had some chefs sampled it.  This dish is very very very tasty.

SeanT, I added these to your recipe:-
red and green sweetpeppers, garlic, thyme, and crushed red pepper(a spicy taste). I didn't brown the Okra as per your recipe.  I prepared the onions, garlic, and peppers saparately and used hake fish

Trying to find the link with the recipe SeanT posted but unable to do so.

Talapia in creole sauce

Creole sauce

olive oil
butter
lime juice
tomatoes or tomato paste (optional)
onion (finely chopped)
sweetpeppers (finely chopped)
pepper and salt to taste
celery (finely chopped)
garlic (finely chopped)
honey (optional)
Thyme

Direction

Saute tomatoes, onion, sweetpeppers, celery, garlic and thyme in oil and butter
Add skillet
add lemon juice
salt and pepper to taste
add little water (enough to cover fish)
cover/simmer 10 minutes

Here is the original recipe posted by sT

Liberian Okra Stew

Ingredients:

1lb of tender fresh okra, trimmed and cut into pieces
1 onion, finely chopped
3 fresh tomatoes, chopped
3 tsp tomato paste
6 tbsp oil
1 dried fish, flaked and de-boned
salt and black pepper, to taste
METHOD:

Fry the okra in the oil until lightly brown then add the onions and tomatoes and stir. Cook until the onions just soften then add water to cover along with the dried fish and season with salt and black pepper. Bring to a boil and add the tomato paste. Cover the pot and reduce to a simmer, cooking for about 30 minutes, or until the okra is tender (stir freqently and add more water as required). Serve with rice and a hot sauce

Strawberry, mixed fruits, banana pie

21 oz strawberry pie filling (can)
8.75 oz fruit cocktail (drain syrup)
2 medium banana, peeled and sliced
whipped cream
1 graham cracker pie crust (lazy to make pie dough)

in a large bowl, combine strawberry filling, banana and mixed fruits. 
spoon into crust.
spread whipped cream over pie
chill, serve

Raisin Bread

Water - 1 1/2 cups + 1 tbsp
Butter - 2 tbsp
Bread flour - 4 cups
dry milk - 2 tbsp
Sugar - 2 1/2 tbsp
salt - 1 1/4 tsp
Ground cinnamon - 1 1/4 tsp
Dry Yeast - 2 1/4 tsp
Raisins - 1 cup

Wanna hear something, I forgot to add the dry milk.  Embarrassed Embarrassed Embarrassed

Dirty Rice Seasoning Mix

2 tsp cayenne pepper
1 1/2 tsp black pepper
1 1/4 tsp sweet paprika
1 tsp ground cumin
1/2 tsp dried thyme leaves
1/2 tsp dried oregano leaves
1 tsp dry mustard

Rice

3 cups water
salt to taste
1/4 cup onion medium dice
1/4 cup sweetpepper medium dice
1 1/2 cups long-grain white rice
1/2 tablespoon garlic, minced fine

In a pot bring the water, onion, sweetpepper, garlic and salt to boil
add the rice and stir well
when the mixture returns to a boil, turn the heat down
*add 1 tablespoon of dirty rice seasoning
cook until rice obsorbs all the water and the grains are tender

* if rice is not "dirty" enough, add extra of the seasoning

Breadfruit Salad

Ingredients:

breadfruit (small chunks/diced)
onion (finely chopped)
red and green sweetpeppers, finely chopped
hard boiled eggs
celery, finely chopped
mayonnaise
mustard (optional)
black pepper

Method:

Peel and cut the breadfruit into small chunks.
Wash thoroughly, then put to boiling salted water and cook (15 mins or when b/fruit is soft but not too soft)
Allow to cool.
Add onion, sweetpeppers, celery
Mash the egg yolks and sprinkle over mixed ingredients/ dice egg white and add to salad
Add the mayonaise and balckpepper
Mix thoroughly and chill.
Serve when chilled

French Bread

Ingredients

12 1/2 oz water
1 1/2 Tbsp butter or margarine
4 1/4 cups Bread flour (see flour i used)
2 Tsp Sugar
1 1/2 Tsp Salt
2 1/4 Tsp Dry Yeast

Method

In a clean bowl add all ingredients
with a spatula, mix dough then . . . . . .
Place dough onto a lightly floured (all purpose) surface
knead dough for approx 8 to 10 mins (smooth and tight). If dough is sticky, add a little flour at a time
Divide into two (ball shape)
place dough into an oiled bowl (I use spam)
Spray top of the dough with spam or pour a little olive oil on top
cover with plastic and let rise in a warm place until dough almost double/doubled
Punch dough down
divide in two
form each dough rectangle shape
leave to rest for about 30 mins (keeping both dough under plastic wraps
after resting, take a scissors or knife and make three slashes (diagonal)
Place into baking pan
bake for 20 -30 mins - 375 degrees
