A recent survey of current Premiership managers asked the question "Which one player in the history of the premiership would you pick to start your team?" 11 of them said Roy Keane. He played the central defensive midfielder position so far above anyone else (ony Viera ventured close) and willed his team to big wins on several occasions (whereas Viera often choked).
Henry is a special player but has never had a signature game a la Roy Keane's Manchester United vs. Juve in 1999. His scoring records were also often matched by Ruud, Andy Cole and the like.
In the end, I voted Cantona for sentimental reasons; he brought Manchester United the first ever premiership title one year after leading Leeds to their last title. Other surveys also rank him the best prem player ever.

No surprise there, it's the 11 managers at the bottom of the premiership, 11 of them are also wankers.
