Please DON'T use WHEAT FLOUR to make swallow like Amala. Read this post before you decide. "Wheat is now the preferred swallow meal for many Nigerian families particularly in the urban centres. Sadly too, some rural dwellers have hooked onto the fad that wheat is a “healthy” food. Early this year, a middle-aged man from Ekiti State came to my office for solution to his health challenges – diabetes and high blood pressure. Upon enquiry on his diet, he said wheat was his major mealdaily. According to him, virtually all the civil servants working at the state and local governments in Ekiti State also eat wheat as their regular meal. In fact, he said those that are not eating wheat particularly in the state capital could not afford it, but not due to knowledge of its harm to health. What an irony? Otherwise, how do we explain the preference of wheat to pounded yam, which the Ekiti people have been eating for good health and vitality centuries back? The prevalent consumption of wheat across the country has clearly shown that in the absence of knowledge, people can accept poison as therapy. After all, wheat is the first choice food for diabetics on the strength of doctors’ advice. Nationwide, wheat has overshadowed yam flour and other starchy foods that are peculiar to our culinary culture in Nigeria. Unfortunately, this is one dietary change that may prove suicidal for many people given the inseparable linkage of diet to health or ill health. Though wheat, like other grains, is rich in fibre and some other nutrients, it is one food anybody that desires wellness and long life should be kept at arm’s length. Why? There are three inherent dangers in the chemistry of wheat that make it a classic destroyer of health. I call them the downsides of wheat. Wheat contains gluten – a protein that causes inflammation, a systemic process that has harmful effects across all the organ systems in the body including the brain, heart, joints, eyes and digestive tract. As a matter of fact, inflammation does not only precede all degenerative diseases like diabetes, cancer, stroke, glaucoma, arthritis and Parkinson’s disease, but also fuels their insidious progression. A review paper in the New England Journal of Medicine listed 55 diseases that can be caused by eating gluten-containing foods. The diseases include osteoporosis, anemia, cancer, canker sores, fatigue, rheumatoid arthritis and multiple sclerosis. The paper also linked gluten to many psychiatric and neurological diseases including depression, schizophrenia, dementia, nerve damage, epilepsy and autism. The paper concluded that there are 120 or more diseases associated with eating foods that contain gluten. Dr. Joseph A. Murray, MD states that he is surprised how often gluten affects the brain. -

Another study by Dr .J. Robert Cade, MD of the University of Florida showed that people with autism and schizophrenia have high level of peptides in their urine. These peptides, according to Dr. Cade, come from casein (protein in milk and other dairy products) and gliadin and gluten in wheat, barley, oats and rye.

Another study of 30,000 patients analyzed from 1969 – 2008 reported in the journal of the American Medical Association found that people diagnosed with gluten-sensitivity had a higher risk of
death from cancer and heart disease than the normal population. Worse still, the bulk of wheat being consumed in the country is the American hybrid strain, which has much higher gluten content than the European wheat.

The second inherent danger in the chemistry of wheat is its high Glycemic Index GI. Glycemic Index is a scale that ranks carbohydrate rich foods by how much they raise blood sugar level compared to low glycemic foods. Wheat has GI of 71 compared to yam and sweet potato with GI of 49 and 54 respectively.

Invariably, eating food with high GI like wheat regularly promotes weight gain and makes diabetes intractable.
According to Dr. Mark Hyman, MD “wheat is a major contributor to obesity, diabetes, cancer, dementia, depression and many modern ills.” If one may ask, what is the science behind the recommendation of wheat as a meal to fight high blood sugar?

Also, many people do not know that wheat, which is being promoted as a “healthy” food, is one of the most acid-forming foods. What are the health implications of eating acid forming foods?
Wheat and other acid-forming foods lower the body pH and deplete oxygen level in the cells and tissues, which is the primary cause of all diseases. In other words, if wheat causes low pH that triggers diseases, eating wheat and its products is akin to adding fuel to fire for people battling with one health challenge or the other.

What are the physiological effects of low pH on the body organs? Eyes are the first victims of degenerating effects of low pH and its consequences include cataract, glaucoma and other forms of
visual impairment. Also, low body pH makes the heart overwork by robbing the blood of proper oxygenation and causing irregular heart beat and systemic degeneration of the heart muscle and
blood vessels, which can ultimately lead to heart attack and stroke. The brain and nerves also malfunction when the body pH is low (acidic pH).

Furthermore, acidic pH undermines the vital functions of the pancreas –production of insulin for glucose metabolism and digestive enzymes for synthesis of protein. Yet, the dysfunction
of the pancreas triggers diabetes and cancer, with the former setting the stage for the latter. A joint report by the American Cancer Society and the American Diabetes Association noted that
people with type 2 diabetes have high risk of developing cancers of the liver, pancreas, colon and bladder. Acidic pH causes clogging of the colon with acid wastes resulting in chronic constipation,
which makes healing of any health challenge impossible.

TIPS
Healthy alternatives to wheat
• Yam & yam flour
• Unpolished rice
• Sweet potato.

My Tonniey,

An advice is just that... An advice....Smoking kills is what you'll see on every cigarette packet but I know old people that smoke 30 a day that are still rocking life. Our bodies have different make ups indeed but it doesn't mean we can't issue a warning when we can. So please don't make it sound like I just woke up and decided to write a long ass article about wheat. Heck I love wheat.

There is research on that topic...and the article is correctly referenced. I'm just bringing it to the attention of the good folks on here. You can choose to take the advice and moderate your consumption or you can choose to consume wheat for breakfast, lunch and dinner. Each to their own. But don't discourage others from taking the advice into consideration.

Tonniey:
@ OP. Thank you for your exposition. But I want to let you and other people know this....

1. Every food/drinks we consume is a potential poison.

2. Our body reacts differently to the various food we eat. This is because of the variations in the biochemical composition of each individuals. If Mr A eats beans and causes stomach disorder, Mr B will eat it and he will feel fine. It is called genetic polymorphism or hypersensitivity. This because Mr A might lack the enzyme that can act on beans and break it down to its components which will be useful to the body, while Mr B has the enzyme. The protein content of our wheat is far far more than yam or other starch we consume. So I will advice u to get info about the medical record of ur patients first before u start telling people to stop eating wheat. Thank you

I repeat. Very rubbish thread.

I hope you know some people react to gluten just the same way some people are lactose intolerant and some people react to nuts.

That's why in sane countries, you will find sections on the super market shelf for gluten free food and food packaging clearly labelled to indicate they contain nuts.

So just because you've reacted to gluten is no reason to condemn wheat. Stop your ill informed scare mongering. Wheat is very healthy and it is used in various food. Bread, pasta, cake, etc.

Just what I wanted to point out. Wheat is a very rich grain, in fact it's richer in protein dn any other grain. People that reacts to it have gluten intolerance and will actually have to stay off some other gluten food.
Do you know semolina is made from wheat? Infact "durum" wheat, which is higher in gluten.

I can relate to this having, seen my uncle suffer and die about two years ago.
His major diet was wheat. He was always eating it, thinking its a healthy alternative to other form of swallow food.( He was diabetic)
Diabetes didn't kill him, what killed him was strange, cos even doctors didn't have any mane for it. (I guess they weren't able to diagnose it because it was already too late)
Some of the symptom he showed before he died was almost identical to what the poster listed, including swollen stomach, general organ failure, depression etc.
Everyone thought it was a spiritual case even me. But it took about a year for me to see someone else who died from similar condition and his case was related to gluten, that was how I figured out my uncle's case probably is also gluten related because he ate wheat a lot .

No body said wheat isn't very healthy. As a matter of fact, it is very very healthy but too much of everything is bad.

I am lactose intolerant, yes... Doesn't mean I don't eat (with great caution) diary products! As a matter of fact, a lot of black people are lactose intolerant. Also do you know that too much diary products builds mucos in our body which in turn feeds cancer cells? But let's not go into that. Like I said...too much of everything is bad, no body says you should stop eating it. Read the advice and eat it in moderation.

Also I believe the wheat we eat has some other grains mixed in it to give it that smooth consistency. The wheat I know like pure bran wheat and wheat in its untouched form is very coarse. So perhaps the additives also add to the health warning.

Read it and make what you will of it!

I'm sooo sorry to hear about your uncle. Like I keep saying, I think it is generally about moderation. Glutens aren't the best in any diet. Wheat is mentioned here specifically because of the undue focus on it as a 'healthy' alternative. It could have been 'garri' or 'fufu' if those ones were termed healthy. People fail to see the actual point being made.

Once again, my condolences!

It is very healthy but it does not remove the fact that it contains gluten and gluten is not very healthy. Like I said, wheat is specifically mentioned because people are eating it in copious amounts and it could have easily been another grain being mentioned. All types of wheat have gluten....gluten is bad. Reduce the amount of gluten...that's the moral.

What Foods Have Gluten? Gluten is found in wheat, rye, barley and any foods made with these grains. Avoiding wheat can be especially hard because this means you should avoid all wheat-based flours and ingredients.
These include but are not limited to:
White Flour
Whole Wheat Flour
Durum Wheat
Graham Flour
Triticale
Kamut
Semolina
Spelt
Wheat Germ
Wheat Bran
Common foods that are usually made with wheat include:
Pasta
Couscous
Bread Flour
Tortillas
Cookies
Cakes
Muffins
Pastries
Cereal
Crackers
Beer Oats (see the section on oats below)
Gravy Dressings Sauces This may seem like a long list, but there are still plenty of gluten-free foods out there! Choose from many fresh, healthy foods like fruits, vegetables, beans, dairy, nuts and gluten-free grains like quinoa or rice. There are also gluten-free versions of many of the foods above available in most grocery stores. You just have to look for them!

Wheat is a very healthy food. But some persons are allergic to gluten just like other things. I know a person who is allergic to pineapple but it doesn't mean pineapple is dangerous or unhealthy. You just have to know id you are allergic to gluten or not. But if not, then it is an amazing substitute for eba or fufu.
