There is nothing like plantain Amala . Amala is Amala.

What is amala if not the process by which it is made. Why do you think we have Amala Lafun? Perhaps, you should go to the local market and ask. Perhaps, if you can convince the iya olojas, then you can come back to convince me too.
Regards.

See the tomatoes a friend and sister of mine got for 3k something. So cheap, right? She said you can even get for less than that amount if you go certain days. Location is FCT-Abuja.

In case you're in Abuja or anywhere, and you need something like this, plus other food stuff, including livestocks( goats, RS, cow, etc) at cheaper rates, I got you covered.

You can buy fresh like this and process by yourself, or I process for you.

Nairalanders, please patronize me.

For the soup, I buy peanuts and mill them at the store. On a low medium fry pan, I toast the milled peanuts. The idea is to add some nuttiness to the taste. In a cooking pot, boil the proteins you intend using (most times, I boil the different proteins separately because they require different times to cook and it is not all stocks you use in cooking). While the proteins are boiling and you have toasted the milled peanuts to a reasonable extent, wash your bitter leaf (I use dry bitter leaves so most times, I soak them earlier). Once they are tender to your satisfaction, add a little palm oil and ground pepper. Allow them to boil to prevent the oil from having a funny taste on your tongue when eating. Once the palm oil is cooked, add your peanut and stir properly. If it is too thick, you can add a little stock. Once it starts to cook, you add the bitter leaf reduce the heat and allow it more time for everything to meddle together.

For the pounded yam, peel the yam and add to a pot of boiling water. Allow the yam to cook and transfer into a food processor using the plastic one (I don't know the name it is called but I mean the thing that rotates inside the food processor). Use the dough option and once it is smooth, transfer into a big bowl and use your spatula (turning stick) to ensure it is very smooth. Put your cling film in a deep soup bowl, cut the pounded yam inside, and wrap well.
Good instructions

Amala is made from elubo which is the product of dried peeled yam. Besides elubo, amala can be made from other products. Plantain can be dried and a powder of same can be made which then can be used to make amala.

Pupuru is made from cassava and yes, I know Pupuru. Our tenant and a next door neighbor growing up are from Ikale. So Pupuru is a staple around the house particularly, when they host their meetings with Marugbo (not too sure if this is how it is spelt). One interesting thing is when they start to sing in the evening into the night, it was always fun. Unfortunately, not too many meetings were hosted by them but the few ones were memorable.

That's great. You know it. Yes, the Soup is called Marugbo , it is Ondo state version of Black soup .

I believe you know Lafun is also made from Cassava flour . Which is popular among the Egba people. You will never hear them call Lafun Amala funfun. They simply call it Lafun. Which is the name. So I find it ridiculous when people call it Amala funfun .

I think it all depends. Don't let us derail the thread. Are Lafun back in the days as a boarder schooling in Ogun State. It isn't so much of a pleasant experience perhaps, hostel food wasn't overall.

I used this browning sauce pictured below. I added purple cabbage to mine hence the darker color

But prior to adding it, I just seasoned my chicken as usual (season to your taste).

The rice and peas were cooked in coconut milk and a bit of salt. Then I served it with the sauces from the chicken and cabbage.
