They are misguided. Burdened by the constraints of the flesh. Not everyone can overcome the immense pressure imposed by the 5 senses, and considering that humans are social animals, it's understandable that so called MOGs are hesitant to mention Christ as a role model.
Another reason could be that the pastors consider the matter to be self evident.
Yet another reason could be that they are telling lies and do not really believe the words that come out of their mouth.

My brother sometimes i just help but wonder, when i see most of our GO's having a mere mortal as their MENTOR and yet want us to be and live like Christ Jesus, hence expecting much more from we their sheep
