Overripe plantains may not really look very appetising; the fruit turns soggy while the peel may turn black or brown–they are very good for our health. An overripe plantain is rich in potassium and antioxidants, which, according to livestrong.com, is beneficial in preventing or delaying cell damage in one’s body. So do not toss them out, put them to good use, in this case, plantain Pancake.

This easy pancake recipe is the perfect way to use your overripe plantains. Remember that the lighter you make the batter, the thinner the pancakes will turn out. Pancakes are a delicious food that undoubtedly brings up fond memories of childhood breakfasts or of slow weekend morning where breakfast isn’t a quick grab-n-go to get out of the door on time.

The best part of this recipe aside from it being yummy and nutritious, it is super easy to make. If you are used to simple pancake mix, of just sugar, egg, flour and water then it’s time to get creative. Join us at Tiger Kitchen to learn an interesting way of making a fluffy Plantain Pancake.
