Plantain as a major source of food in many
regions throughout Nigeria and Sub-saharan
Africa can be grown and processed profitably in
Nigeria.
The production of plantain as shown from
research is over 70 million metric tones per
year. Despite this figure, we are still in short
supply meaning that demand is more than
supply.
Plantain can either be used for domestic
consumption or as a source of raw material by
other processing producers.
For instance, plantain can be processed into
chips or flour and sold locally or export abroad.
Plantain flour because of its value has now
become a popular food today in both local and
foreign market.
In Nigeria, the potential national demand for
plantain flour has been estimated to be in excess
of 200,000 Tonnes/Annum
The current supply level is probably less than
20% of the estimated demand with only few
companies producing on mechanized and
commercial scale.
The facilities required for a small/medium
scale plantain flour mill include drying
machine, slicing/chipping machine, milling
machine and packaging machine.
The average production cost per Kg of plantain
flour is N236, while the average retail price per
Kg of good quality plantain flour is N330 per
Kg.
Plantain is the major raw material for plantain
flour production, and it is available all year
round in commercial quantities in many parts
of Nigeria such as
Enugu,Imo,Osun,Oyo,Ogun,Anambra,Bayelsa e.t.c
Nigeria is said to be the largest producer of
plantain in West Africa.
The processing line for plantain flour
production is as follows:
1. Sorting: This involves inspection of plantain
fingers to identify and remove unsuitable ones
i.e. spoilt, immature pulps e.t.c.
2. Weighing: The sorted plantains are properly
weighed to quantify input of the raw plantain.
3. Blanching: The green plantain fruits are
soaked in hot water for some minutes to soften
the skin for easy peeling.
4. Peeling: The plantain peels are removed
manually using sharp knives to obtain the
pulp.
5. Slicing/Chipping: The pulp is sliced or
chipped with the aid of a mechanical slicer.
6. Drying: The sliced plantain is dried in a
short time with the aid of an industrial drying
machine.
7. Milling: The dried plantain slices/chips are
milled in a hammer mill.
8. Sieving: The flour is sieved to obtain the
desire particle size.
9. Packaging: The flour is packaged in moisture
proof packaging material ready for sale.
Now, if you operate a plantain flour mill that
has the capacity to process 1tonne of plantain
flour per day, and you implement a good and
efficient marketing strategy, the following
average monthly figures are true:
Production volume per month = 29tones
(29000Kg)
Sales = N9, 570,000
Direct cost of sales = N6, 844,000
Miscellaneous = N500,000
Profit per month = N2,226,000.
Plantain flour mill can be operated profitably
any where in Nigeria. The start-up cost at a
small scale is approximately N6,000,000. This
will cover the cost of procurement of land,
factory construction, furniture, vehicle and
procurement/installation of machinery.

Good question.
The peel can also be grinded to make flour.
Its very nutritious and high in vitamins.
Would be dried for some days and then follow the same process of making plantain flour.
It also mean that you will be making money from both the main plantain flour and the flour generated from the peel.
Brazil is the highest producer of this kind of flour.
generated from the peel.
This can also be an advantage for new plantain flour establishment because most flour companies actually dispose them off

Good that you are researching more on that, probably you will get one or two things there.

Good Plantain flour must be odorless, have bland taste etc.
In as much that you have good plantain bunch, you are good to process into plantain flour.

What is the growth cycle, the height of the trunk and the weight of the bunch, number of fingers, the length of the whole bunch, the grade of the fruit, how much dry matter per 100gm, the colour of the pulp in maturity, the bunch yield for Agbagba?

How much could you be able to supply?

If possible, can you post photo of a bunch of agbagba? Thanks.

Nice Write-up, but my question is ........
what exactly are you adding to the flour to form.

And secondly, you talked about the flour but didn't talked on how to make the flour into food that will be consume by the people? Or can the flour be consumed ordinarily?

Thirdly, having to dry it with a drying machine, is there any implication to the production? and why not drying with the natural sun?

Vitamin A can be added to the flour. The flour is used to make swallow majorly consume by diabetes patient.

Cabinet dryer is best used to dry it.
Using natural sun mighylt expose your products to contamination

2015 is another opportunity to do something differently from how you did it in 2014 if the result you got by doing it that way in 2014 is not worthwhile.

If you have done it differently, you would have ended up with a different result.

See agriculture and do it differently and good result awaits you.
