Is Garri Production Using Mechanical Fryer Same Or Better Than Using Manual? by Pafetkazzy(op): 1:27pm On Feb 04, 2025
HIS QUESTION:
Is Garri Production using Mechanical fryer same or better than using manual frying method?

MY RESPONSE:
1. quality of garri, when mechanical fryer is deployed will match that of manual frying, if the fryer is consciously fabricated with provisions for heat and speed alternation, as its applicable in manual frying. The quality output of the garri is largely also depends on man-handling of the machine, as it also applies in manual garri frying.

2. Quantity output per batch, when mechanical garri fryer is engaged is more than that of manual frying. While a mechanical fryer can completely fry processed pulp from a pick-up load (2.8 tons) of cassava tubers within 8-10 hours work period, it may take four to five competent manual fryers twice that period to completely fry same quantity.

3. On whether the engagement of the mechanical fryer is more economical than manual frying or not, of course it is - as long as the machine is efficiently deployed, which is a function of energy consumption viz-a-viz output quantity within a given period of time. Though, there are some locations where cost of manual frying is very cheap and would significantly overwhelm the need for a mechanical fryer.

So, it is a matter of choice.

Please note: the correct terminology for the process is not actually frying, it is called 'garification' or 'garifying'. That is the professional jargon for that process of allowing the pulverized pulp to firstly cooked under moderate and controlled heat process and then finish-drying the cooked pulp to form crispy grits. Why are we using the word frying by the way? where is the oil?

Unfortunately, some mechanical fryer only does drying, not cooking before drying, and the output would be flour instead of grits. This is due to the fact that such machines are built to keep rotating at the same speed from beginning to the end. In that case, if the operator does not master the art of heat management in the process, the machine will keep producing flour.

So, when next you are procuring the machine, endeavoour to ask your fabricator to install variable speed system with the machine. It will cost more, but it will make a lot of different.
