Nothing is wrong with the Formation - 3 - 5 - 2 or 3 - 4 - 3 - rather the Personnel executing it. Conte needs to play the right Players in the Midfield.

I suggest he tries out Kante and Drinkwater Pivot in a 3 - 4 - 3 Setting with Morata, Hazard and Pedro/Willian in Attack.

This season we have been playing big teams with 3-5-2 because conte doesn't trust any of fab or bakayoko to do what matic was doing with kante. This is what kante vs matic did all through last season against bigger teams without qualms. Now we have to pack midfield like sardine before playing a decent game against a better side.

To me Barkley in a 2 man midfield will not be as lazy as fab or bakayoko. E better we use him that way rather than the 3-5-2

No other striker in the league has enjoyed as many big chances in the league as Morata
but no other striker in the league has wasted as many chances as Morata

The major difference between chelsea of last year and what we have now, is the contrast in ruthlessness in front of goal. Against man city last season, we only had 4 shots at goal, 3 resulted in goals. In fact city had 61% ball possession, ours, 39%. They had more attempts on goal, yet we demolished them 1-3 and i am not sure you wanted conte out after that win at ettihad.

Our top striker should be fired up, bully defenders and bury most of the chances. Look at this goal below:
