Yes defenders are outfield players but their chances of scoring or assisting is low compared to strikers and midfielders that's why you should be consider other options of awarding them points.

I think a clean sheet point should go to a keeper.

For the first one - unless you pick a keeper then yes. Defenders are outfield players so they can technically score or get an assist or MOTM.
You make a good point re point deduction (for a yellow or red card) but you do realise that would be extra work for me.

But yeah I may incorporate that hoping it doesn't take too much of my time.
