China experienced plenty famine in its history
Ancient Chinese had to improvise by eating insects and from there they began to explore many other possible wats to find food and survive the famines.


Many generations later, China invested heavily on Agriculture to avoid any no more famine.
Tho there is no famine any more, the old tradition and cuisines of their ancestors ate to survive still remain national delicacies.

That's why they still eat frog,octopus,maggot,rats,dog,jellyfish,crocodile, tortoise even centipedes.
The believe of the Chinese during serious Famine was that With the right Spice and oils anything can be eaten.

So what you are seeing today is a result of decades long farmine which forced Chinese people to cook anything and eat.
Now it is seen as normal delicay to them
