This morning, I woke up and decided to put my faith to use. I was craving fried rice and chicken, but I had 1k to spare. I was not deterred.

Carrot runner beans, Green pepper and green peas ,- 100 Naira.

Life chicken 400 naira

A mudu of rice 100
Vegetable oil 50
Stock cubes, herbs and spices, pepper, onion, ginger and garlic 50
Liver 300

The mode of preparation is same as I highlighted in my previous thread. Thus instead of repeating that, I would instead, share tips on how to prepare the best fried rice. Give this a trial and you would be convinced.

1. Just like party jollof, a banging fried rice depends mainly on steam-cooking your rice. Thus do not parboiled the rice. Wash with hot water and salt and drain. When cooking, ensure that the rice and water is at the same level, seal properly, low heat and even when the water is almost out or completely out, allow steam to complete the cooking process.
2. The name "fried rice" was coined because of this step, yet most people don't use it, thereby, they cook curry rice calling it fried rice. This step is simple. The first step in cooking your washed and drained rice by frying. Once the water is completely drained from the rice, in an empty pot, add a little butter and/or vegetable oil. Once hot, saute some onion, herbs ( I prefer bayleaf,rosemary, very little curry, ginger and garlic paste, coriander and oregano). Once their flavours are out, pour in your rice and fry CONTINUOUSLY for about 10 minutes. At this point, your rice should appear fried and glistening. Then you can go ahead and put step 1 to use. Note steps 1 and 2 should be done on low heat. This step is guaranteed to make your fried rice last longer even outside the refrigerator. PLEASE DO NOT USE A NON-STICK POT.
3. Please easy on the spices, especially curry. Too much curry would overpower the taste and aroma of your food.
4. Please prepare a fried rice base with your veggies. Don't pour in raw veggies directly into your rice. That may work, but the flavour won't be great. Make a sauce base using all those veggies, but don't overcook them.
