illicit:That is not locust beans, what igbos make from locust beans is called okpei (iru), I think Ugba is called apara amongst the Yorubas. Ugba/Ukpaka is fermented African oil beans, cooked for hours before shredding it, washed and cover for 4-5 days to ferment. |

illicit:My parents said back in the days, they used to go to Ogolonto in Ikorodu when it was still more like a village to go buy this African oil bean seeds in bulk from Yoruba village women who didn't know much of its high value amongst the igbos, even the premium oha leaves though we had our own oha trees in our compound there in Lagos and most of the oha leaves in the market were coming from the East. ![]() |

Mindlog:Igbo uses castor beans but cos it's very expensive and not available in commercial quantity, they turned to locust bean then egwusi seed. I think all over the world except the west, they use any of these beans to make fermented seasoning. Gambia call theirs ogiri too but they use sesame seed. My shock when I first encountered it. Whoever invented these things are genuises but ours are yet to be made into commercial quantities like soy sauce, pastes and the rest of them. |
