If you have stale sliced bread (2-3 days old at least), and you don't know what to do with it, or if you're like me and don't enjoy eating sardines straight out of the can, then here's what you can do:

Sardine sandwich


~ Empty your can of sardines in a plate, including the oil.

~ Remove the bones, guts, and scales (if there's any)

~ Mash with a fork, then fill a slice of bread (according to how you want it), and cover with another slice.

~ When you're done filling, melt about a tablespoon of butter or margarine in a pan, on a low heat, swirl to spread evenly, then toast the sandwiches on both sides, one or two at a time (depending on how many your pan can contain at once), pressing down with a spatula.

~ It is ready, once it is golden brown.

N.B: Be sure to lower your heat, to prevent them from burning quickly.

Once you take out each batch of sandwiches from the pan, remember to melt another tablespoon of butter or margarine again, before going in with another batch.
Repeat, until you toast all.

Sardine toasts

~ I reserved some of the sardines, then added two eggs to it, mixed, then spread on both sides of each slice of bread, then toast on both sides, (margarine already melted in the pan) on a low heat, till lightly browned on both sides.

You can make and enjoy them over the weekend.
They're easy to make, yet so delicious.

Not a fan of mackerel or any type of fish sandwich, it irritates me to my bone marrow. Bread hardly gets stale in my home but if I have bread of 2 days or more, I make french toast. Whisk the egg in evaporated milk (or powered milk mixed with very little water). Soak the bread in the mixture and toast in in a pan on low heat with very little oil or margarine till it's golden brown. Very scrumptious but it consumes.a lot of ingredients.
