From everyone's comments here, it looks like what outsiders seem to like most about Hausa food is their meats and drinks.

Hmm I can’t even eat aboki noodles and egg. The only Hausa food I can manage is suya and I always ask the suya man to make sure he roasts it till it’s dry make all the germs die. My tummy is too sensitive

Hausa Don't use enough oil in their soup... So mostly the soup is colorless... And people like us will lose appetite once the soup looks somehow....

But I love their masa with kunu Aya

my 6yrs in the North i only ate masa cus to me if it doesn't look good i dont believe it would taste good...

Yoruba restaurant —> Yoruba+Igbo+Hausa Customers

Igbo restaurant —> Igbo+Yoruba+Calabar Customers

Calabar restaurant—> Yoruba+Igbo+Hausa+Calabar

Hausa restaurant—> Northerners

Just last month there was a small riot in the company I work for.
The Hausa woman that cooks in our Canteen serves only Northern food and soups.
We have 70% Northern workers and 30% Southerners.

The South boys usually prefer to leave the company and go to a restaurant far in the village just to eat lunch everyday. I have never seen them eat our food.

The company had to bring in a Calabar woman to cook for them after much protest. This woman’s food is more expensive but they don’t complain.

Poor hygiene. I spent 3 months in Kano from NYSC camp Kusala Dam to Sabon Garri I did not see reasons to try their food because of unhygienic practices around them

no with masa. Masa are actually made from rice and milon soup. Spend my childhood in Kaduna and most of those Northan cook well and have a nice food.

The reason is this, God created the system of 90% of all Southerners to react/reject the food from the North, but God created the system of MOST people from the North to quickly adapt to ay food from any region of the country. Blame God.

There is no food I don't eat. I eat Hausa food, igbo good, Igala food Ebira food, Edo food etc.

When the family is too large, don't expect quality food. One of the reason why most northern food is always come with low quality aside poor hygiene.
Rate of poverty also contributed.

Also, too much of white maggi etc.

Southern food maybe costly, but most times the quality is always there. Southern don't joke with swallow food with good soups.

They don't cook well, period!

Their hygiene has a bad reputation and that will always affect how their meals are accepted by outsiders. I will be less willing to try out their meal compared to Calabar people's because of difference in reputation.

They dig water well close to soakway so imagine what water is being used. Eslecially those househild prepared small-chops. Imagine the water inside.

I thought it was only in eb1lokan’s Lagos where wells are dug close to soak aways.

Even the imagination of me eating Hausa food makes me uneasy. If there is a competition between the indians and Naija on whose meals look appalling, the Hausas would rep wella. And they are always friendly. Almost can make you start feeling guilty for not patronizing them. It all boils down to the look of their food as well as their level of hygiene.

One year I spent in Yola was hell. I only had access to one Yoruba restaurant and her food was not impressive at all.

Hygiene. It is comparable to Indian street food.
