Well, Nigeria have deep-rooted prejudices regarding cuisines especially for those whose eyes eat before their mouth.

That's mad cool. "So aromatic and tasty" depending on the ingredients used andcwho makes it... That's "yaji" for you. I had my schooling at an elite high school with boarding facilities decades back in a major Northern State, so, that's how I got more exposure to the Northern cuisines and ways of life. Nearly all Northern and/or Hausa foods are practically OK. That's why I spoke about confirmation bias and prejudices by some on this thread.

You're right about the last paragraph though. Presentation matters to many folks BUT once each regional or ethnic-based cuisine is served creatively and with attention to little details, then we're good to go.

Their hygiene has a bad reputation and that will always affect how their meals are accepted by outsiders. I will be less willing to try out their meal compared to Calabar people's because of difference in reputation.

They dig water well close to soakway so imagine what water is being used for processing. Especially those household prepared small-chops. Imagine the water inside.
They also wash fruit with gutter water. A known fact.

I will never eat food prepared by the average northerner. Hygiene is zero. I tried it twice and became temporary friends with my toilet.

One time I saw a Suya seller washing his fresh meat in gutter water that overflowed it's bank and flowed into the compound. I was flabbergasted!

Hausa and India are the same category In food. Hausa will sell you food with ordinary hand and will even put magi to food that is already cooked .hawusa will do stew with out cooking it just ordinary dry pepper and magi, salt with water they will eat it raw with out cooking

I stay in lgaos but I have a friend who is from North he cooks there tradition food even looking at the food I can't even taste it
