Apart from frying, what else do nigerians use plantain for. Few peeps do boil it.

Indeed, "Amala Ogede" is the swallow made from Elubo Ogede which means unripe plantain flour" [likewise "Amala Isu" is the swallow made from "Elubo Isu" which means "yam flour"].

Both types of flours (unripe plantain flour and yam flour) are healthy due to the fact that they have low glycemic indexes for keeping blood sugar under control.
