They produce a very high heat signature.

The Chinese have gifted the Iranians heat seeking sensors that detect and guide heat seeking hypersonic missiles on their targets.

Speaking of radar deflecting stealth aircrafts, this is a one off weapon as any advanced nation can simply go back and dis scramble the radar signatures after a stealth bombing raid and recallibrate their radars going forward to detect same stealth jets.

This is why there is so much secrecy around the US strategic stealth bombers like the B-2 and their take off bases and time is heavily kept secret because once the Russians or Chinese know about them being in the air, they can use their space based radar system to scan the projected route for abnormal distortions in the radar band.
