You don't know what you are talking about. What do you mean by junk? The food on that plate contains the majority of food classes, so what are you talking? Veggies is good for fibre, micronutrients, antioxidants etc, but it doesn't make this junk, pls. Be guided.

Naija meals more of carb calories. If already aging it's better to go more on proteins and fermented foods. And replaced simple carb with complex carb/fiber.

Even with tatase and sombo, you still have to use tomato paste for party jollof rice, for that deep red colour.
Even the Togolese use it.
That na wash.

If you want deep red:
Boil the pepper mixture dry before using it as sauce.
Don't add curry to anything in the sauce and rice, use curry only while boiling the meat.

One of the secret of food coloring is curry. Knowing when to add it and where not to add it. If you want deep brown or Golden brown jollof you can get it by tunning the color with curry.

That's how we have been getting our party red without paste or tin, i haven't use tin or paste for like 10 years in jollof.

Jollof didn't originate from Togo and it's a controversial dish so every country has adapted different ways of preparing it.

There's no party jollof rice without tomato paste.

Jollof rice might not have originated from Togo, but they made it popular in Nigeria.
The recipe we know today as "party jollof" came from them.

Yam porridge, infact anything yam

Jollof rice and beans in particular. Any accompaniment is extra.

I can eat this dish almost every day, and I'm sure I wouldn't get fed up with it.

What is that one dish you can eat without getting tired of?

The way you people argue blindly sha who told you they don't use tomato paste in party jollof?my mother is a caterer and I also did catering services even spicity jollof spices gives the rice dark colour also use only fresh pepper and tomatoes without tin tomatoes and some spices if the rice won't look pale !!

only the tin tomatoes won't be that much.
