Mercator is a 2D projection of the 3D globe, not the globe itself.

Yes, compass bearings are always relative to north...that's exactly why the meridians matter because your bearing angle is measured against them wherever you are. Contrary to your expectations, the angle-preserving property doesn't degrade as you go toward the poles, it holds at every latitude by design.

Mercator is a conformal projection specifically because it preserves angles locally everywhere on the map, not just near the equator. The stretching increases as you move poleward, but latitude and longitude get stretched by the same factor at every point. Since both directions scale together, the angle between them stays true. So a straight line at 60°N still represents one exact constant compass bearing, just as much as a straight line at the equator does.

What actually changes with latitude is scale and area, not angle accuracy.
