The correct option is 'I would...'.
'would' is used when you are narrating a made-up event or statements that deal with abstract, theoretical scenarios. So, appreciation or gratitude like every other emotion is an abstract concept, so it falls under the purview of 'would'.

And it is also the past tense of 'will'. One of its other uses is in the case of a story that has happened in the past but is being narrated in the present day, 'would' serves as the tense that maintains an event's place in the future timeline of that story.
