Mid-twenties, businessman, and moving to the US (from Europe) without a university degree. What career/ incoming generating path do you advise?

You should be find, as long as your stays will be legal. You you can create your own business which is called llc, you can find good and legal business to do here. You can also undergo training and land a regular job.

I'm even attending Career Fairs outside DFW
I'm open for opportunities outside DFW and North Texas. Will be going for another in June at West Texas (Midland/Odessa).

My background is oil and gas. Outside core oil and gas, I'm open to project engineer type jobs or even non-technical to put food on the table, Lol😂. Will appreciate any links or recommendations. Thanks

Hi, and welcome to Texas. If you have the required documents that can let you work legally in the United States like ur EAD or PR, you can start applying for professional jobs in your field. Go to Google, linkedln, indeed to search. Also, I will suggest you evaluate your result., and maybe take one or two professional exams to give you an edge. You can get cheap classes on udemy especially during their sales, that can prepare you for the exam.

But if you do not have the required documents to work, that's another route entirely.

Job market across the US has been very brutal. I mean keep trying, I think you should prioritize your LinkedIn account, Make sure the role you want is on your headline, search for your dream companies and cold email the recuirters from those company, Have your resume tailored to the role you want and keep trying, definitely you should get some bites. Meanwhile you can look at some employment agencies in your city that can place you in non tech Jobs ASAP. Good luck.
