Heart - if it did, you'd have cardiac arrest - literally your heart stopped functioning. Now it could be temporary, or it could be permanent (death).
Brain - if it did, you won't be able to breath on your own, the brain controls everything, you'd be screwed.
Nose - if it did, you won't be able to smell, but you could still breathe through your mouth.
Eye - if it did, you'd be blind. Plus technically it's always seeing, even when you shut your eyelids, it's just seeing the back of your eyelids.
Ear - if it did, you'd be deaf and your balance would be off.

Rest implies a period of reduced activity to ease tension, reduce stress or recover strength
Your brain pretty much rests when you are asleep as most brain fuctions are shut down. Thats why people feel refreshed after a nap.
Your eyes also rest when you are asleep because your cornea and lens are not receiving any input {light}
Your ears rest when you are asleep because you are not actively hearing anything and you dont need balance when you are asleep.

So the correct answer will be the brain and the nose. Both organs have no periods of reduced activity whether you are asleep or awake . Your heart beat per minute and breaths per minute remain the same whether ur asleep or awake (except when performing strenous activity or under stress).

You can live without a nose as long as your mouth still functions or if someone performs a quick tracheotomy. When you nose is obstructed, you automatically start breathing with your mouth. Now if your windpipe becomes obstructed, then it enters a new level of horror.

When you're sleeping, you could say you're in hibernation mode, your brain can never rest, if your brain rests at any given period of time, you lose the function to breath by yourself. Technically, if we're looking for the definitive answer, then it's the brain, it can never rest. I've never heard of a successful human brain transplant. Heart transplants have good succesful rates, people have been brought back to life during the 4 minutes of grace (a human brain without oxygen after 4 minutes experiences severe brain damage) after CPR, noses and ears have been reconstructed for bomb victims. Cornea transplants have a decent rate according to the NHS of 75% lasting at least 5 years, with 65% lasting up to 10 years, that's if your body doesn't reject the corneas of course.
