It's actually same leaf used in making moimoi (uma leaf).

You need to wrap the rice in the leaf while it's still hot (ie when the rice is done) to absorb flavour from the leaf.

You only add the sauce while serving.

Ofada rice is a local rice with pungent smell, more like
Abakiliki rice with little stones.

Ingredients:
peanuts (groundnuts) 2cups
Egg 1
Flour 2cups
Baking powder 1tea spoon
Sugar 1/4 cup
Nutmeg
Coconut milk/flavour
Vegetable oil (for frying)

Procedure:
Step 1: Pick your peanuts to get rid of dirt's & stones, keep this aside in a large bowl.

Step 2: Break your egg in a smaller bowel & add your sugar while beating it very well. (You can add your coconut milk/flavour at this point).

Step 3: In another plate, combine your flour, baking powder & nutmeg

Step 4: Use your fork to collect a little of your egg mixture & smear on your peanuts

Step 5: Shake your bowl very well for the egg mixture to coat the entire peanuts (pls don't use your hands, unless to separate stuck grains)

Step 6: Add a table spoon of your flour mixture & shake your peanut bowel again until well coated.

Step 7: repeat step 4-6 until your peanuts are coated to your satisfaction

Step 8: heat up your oil & Fry in a medium heat.

Remove from the oil when the color turns golden brown and put in a paper towel. Allow to cool properly (at least 30minutes to feel the crunch)

Step 9: Serve / package
