Thank you !!!! I thought as much cos if the egg no burn, the yam no go done. If must be cooked slightly before the dipping and frying.
That was my surprise when I saw his egg still looking fresh. Will try it.

Lol, I can just picture trying to wait till its well cooked without first boiling the yam. "Ever heard of burnt or roasted eggs?"

Lol. I know, but looking at the light colour of your yam, I wonder if you fried it long enough to be properly done.

I believe it's called Dundu. The yams are boiled for few minutes (not so long that it will be properly cooked-half done kinda), before dipping in raw seasoned eggs, then fried. Tastes nice.
