Ceylon is the safer, healthier option due to very low levels of coumarin, a compound that can cause liver damage, which is present in high amounts in Cassia. Appearance (Sticks): Ceylon looks like a rolled cigar with multiple layers of delicate bark. Cassia is a single, thick, hard layer of bark. Health Impact: Cassia contains roughly 250 times more coumarin than Ceylon, making Ceylon preferred for regular consumption or supplementation. Price & Availability: Cassia is cheaper and common in most grocery stores; Ceylon is more expensive and considered a premium spice.
