EducationPhD Researcher Reengineers Traditional Food for Scalable Global Use by Hillary3(op):
PhD Candidate and Founder of Ohini Foundation Unveils Global Anti-Malnutrition Breakthrough
LocalLens Media — Nigeria

A national multiple award winning scholar, Ochelle Paul Ohini, who graduated from the Federal University of Agriculture, Makurdi, with a perfect CGPA of 5.0/5.0 in 2020, a national record yet to be broken in Food Science and Technology is once again capturing attention in Nigeria with a revolutionary innovation in nutrition.

Ochelle, now a PhD researcher at the Food Processing Laboratory, Federal University Dutsin-Ma under Professor Sogunle Atanda Kazeem, has developed a first of its kind formulation of maize ogi (pap) enriched with African yam bean, soybean, and their protein isolates.
This fortified ogi is strategically designed to tackle the three major forms of malnultrition as this; wasting, stunting, and micronutrient deficiency positioning it as a transformative solution for vulnerable populations.

Speaking to LocalLens Media, Ochelle emphasized the broader mission behind the breakthrough. “I am building a model that ensures no child or vulnerable community suffers malnutrition, not in Africa, not anywhere in the world. My goal is not just to complete a PhD but to solve a global problem that has persisted for decades.”

He further explained that this innovation is part of a larger initiative that includes a Nutrition and Malnutrition App, an all in one digital platform capable of diagnosing nutritional gaps, recommending fortified meals, tracking malnutrition cases, supporting community health workers, offering school friendly nutrition lessons, and providing personalized dietary guidance through artificial intelligence.

Through the Ohini Foundation, Ochelle is scaling the production of fortified foods to reach millions of vulnerable people across Africa and beyond, particularly in high risk malnutrition areas. His approach creates a connected ecosystem involving farmers, processors, NGOs, researchers, and government agencies, a model that experts say could redefine public health strategies and food systems on the continent.

One major highlight of his PhD progress Defence, held on 20th November 2025, was his introduction of a modified sensory evaluation methodology. Unlike traditional approaches relying on small panel sizes, Ochelle engaged thirty trained panellists, significantly enhancing the reliability, accuracy, and real world applicability of sensory evaluation results. Professors present described this as “a promising advancement with the potential to redefine sensory evaluation in food science research worldwide.”

With over 20 peer reviewed papers on malnutrition already influencing policy makers, NGOs, and nutrition organizations in more than twenty countries, he has established himself as a leading African innovator in nutrition and public health.

His self funded Organization 'Ohini Foundation' has also conducted grassroots nutrition initiatives, distributing fortified ogi to vulnerable communities across Nigeria.

In addition to his research, He has proposed the establishment of a National Food Fortification and Nutrition Awareness Day in Nigeria. Submitted to the Federal Ministry of Health and Social Welfare, the policy aims to educate households, schools, and policymakers on nutritional knowledge while promoting fortified food consumption nationwide.

Experts note that, with sufficient government support, his work has the potential to become one of the most significant nutrition breakthroughs in Africa’s modern history.

Nigeria is watching.
Africa is watching.
And the world is beginning to take notice.

A new chapter in global nutrition innovation is emerging led by a young Nigerian committed to changing the world, one fortified meal at a time.
