It’s a common dish at Parties/Occasions in Nigeria, it’s also common in Nigerian parties in the diaspora.

Nigerians home and abroad cherish this special delicacy so much alongside our Nigerian Jollof Rice which is loved and eaten across all the countries in West Africa. Most homes always have it on the menu list on special occasions like a family get-together, and also for Christmas celebrations. The combination of rice and some vegetables are a match made in heaven.

These veggies bring out the goodness in this recipe and you’ll be amazed at how perfect and delicious your fried rice would turn out to be.

The veggies enrich the rice, make it colorful, and adds to its sweetness.

You can also make use of some proteins like shrimps, gizzard, or liver for a gratifying taste. I mostly make use of beef liver but in some cases, I’d add the three, this makes it extremely enjoyable.

It’s ok if you don’t like any of these, it’s not compulsory. You can leave this stage out. Chicken or Turkey stock is also a must for Nigerian Fried rice. Make sure you have some chicken/ Turkey available before you proceed with this recipe. With this Nigerian Fried rice recipe, your rice can stay without a refrigerator for 24 hours without going bad and in the refrigerator for up to 2 weeks.

Cooking Preparation

1. The first thing to do is to wash and season your chicken/Turkey with some curry, thyme, garlic, ginger, salt, chicken seasoning cubes/powder, and sliced onions. Cover and allow to cook until soft and tender.

Extract the stock and set it aside. You may choose to fry or grill the chicken or Turkey, which you can later serve with the rice.

Do not use beef stock so as not to overpower the taste and color. Chicken and Turkey stock have a mild taste and blend with the rice color.

2. Wash and dice your vegetables into cubes: Carrots, green peas, green bell pepper, red ball pepper, green beans, sweet corn, onions, green onions, and green cayenne pepper (in case you want some heat in your rice).

3. Cut your cooked gizzard, beef liver into smaller pieces and stir fry slightly. If you are using shrimps, you should also stir fry.

4. Place your pot on heat and add some water to boil, wash your rice, and add in the boiling water, stir the rice, let it boil for about 3-4 minutes. Long grain Basmati rice is the best rice for cooking Nigerian Fried rice.

This is done to extract excess starch from the rice to avoid soggy or munchy fried rice. Do not over boil the rice. Set it aside and allow it to cool before use.

You can also use a day-old leftover white rice in the refrigerator for this recipe.

So since all the preparation has been made, let’s go straight into the cooking of the most delicious Nigerian Fried Rice.

Ingredients

4 cups Long Basmati Long grain Rice

2 cups Chicken/Turkey stock

2 cups mixed vegetables: carrots, green peas, green beans, sweet corn, red bell pepper, green cayenne pepper(optional)

1 big sliced white onions

½ cup green onions

1 teaspoon curry

1 teaspoon thyme

1½ cup Beef liver/gizzard/ shrimps (Choose your choice)

1 teaspoon grated ginger

2 tablespoon butter (30 g)

3 tablespoon Cooking oil.

6 cubes chicken seasoning

salt to taste



Instructions

Place the parboiled rice in the pot on medium heat add curry, thyme, chicken seasoning cubes, and salt to taste.

Now add the chicken stock and more water that can cook the rice but do not overcook the rice to avoid soggy rice. Use the exact amount of liquid to cook the rice.

When the rice is properly cooked, remove it from the heat and, set it aside.

Place a deep frying pan on medium heat, add 2 tablespoons of butter together with 2 tablespoons of cooking oil, and add the sliced onions, the grated ginger. Stir and allow to sauté for 1 minute.

Then add the mixed vegetables one after the other and stir fry. Do not over fry your vegetables but be sure they're properly fried to avoid your rice getting bad quickly. It tastes super good when crunchy.

Now go-ahead to add the cooked rice bit by bit with the fried vegetables give it a good stir and make sure it's evenly distributed.

Finally, seal this goodness with the diced green onions and allow to simmer for about 2-3 minutes. Slightly stir again.

Ready! Ready!! Ready!!! Our Nigerian Fried rice is ready to be enjoyed.

You can serve with plantain, chicken, turkey, and beef. Enjoy

Lateef Adedimeji (born 1 February 1986) is a Nigerian actor, filmmaker, producer, and director, born and raised in Lagos State, but hails from Ogun State.[1] He gained popularity with his first major role in Yewande Adekoya's 2013 movie titled "Kudi Klepto", and has acted in over 100 Nigerian movies since he began acting 15 years ago. Born Okuneye Idris Olarenwaju in 1992, Bobrisky completed its secondary school education at King's College, Lagos. She also attended and graduated from the University of Lagos (UNILAG).

Bobrisky is a Nigerian internet personality who is known as a trans woman in Nigeria, a country with no LGBT rights. She is also known for her presence on the social media app Snapchat. Okuneye Idris Olarenwaju aka Bobrisky.

In May 2019, Bobrisky confirmed that her pronouns are "she" and "her" after receiving several mix-gendered comments on her Instagram profile.

She became recognized by being highly controversial on social media for the ultra-conservative Nigerian standards. Bobrisky was able to gather traffic to her Snapchat account when she claimed she had a lover who is assumed to be of masculine gender despite the law in Nigeria stating that same-sex relationships is an offense punishable by serving 14 years in a penitentiary.

Taiwo Kola-Ogunlade, Google's Communications and Public Affairs Manager for West Africa, said Bobrisky was the most searched individual in Nigeria from October 26 to November 2016.




The parallel between Bobrisky’s contradictory life to Nigeria’s bundle of inconsistencies and two facades is striking. Nigerian society is riddled with blatant illogicalities. For instance, Nigeria enacted the law that sends homosexuals to jail for 14 years, yet Nigerians are one of the highest consumers of homosexual porn according to Gay Star News.[2] Nigerians are some of the most religious people in the world, but their diabolic politicians buy salvation through tithing from equally predatory pastors. Nigeria is one of the richest countries in Africa, yet more than 40 percent of its population live in dismal poverty – the so-called giant of Africa, yet nearly half of its population is unemployed. So, yes, Bobrisky plies the kind of wares they buy: she is hypocritical with a creative twist. Still, Bobrisky, perhaps unintentionally, continues to revolutionize the Nigerian concept of queerness and chips away at the concrete slab of gender normativity in Nigeria.

As indicated in Bobrisky’s interview with Adesuwa Onyenokwe,[3] at the age of 16 she caused a pandemonium the day she walked through the streets of Lagos in flamboyant female attire. This was on a dare, both for financial reward and for the sheer fantasy of displaying her private fascination with femininity in the public space. That legendary outing, for which she was arrested, reinforced her reputation for contradictions. She went to the police cell unashamed of her identity. In taking that walk, she both presented herself as an individual sensitive to the Nigerian culture of paradoxes and hypocrisy and constructed for herself a persuasive identity as a trans woman by acting out her feelings in public. Similarly, on another occasion, she talked about being pregnant and relished the joys of hopeful motherhood.

Conclusion

Many may find Bobrisky’s inclination to flaunt her wealth and social connection in the public domain offensive. I admit the fact of her extravagant life, but it is not surprising given her peculiar situation as a queer person who lives in a capitalist society that regards wealth as a symbol of accomplishment and a criterion for acceptance and inclusion into society’s fraternity of human beings. It is not unexpected that Bobrisky leverages her financial success and social status to blind society’s homophobic gaze and to pave way for herself and for queer people in Nigeria.

It is difficult to speak about Bobrisky without oversimplifying a complex phenomenon. It is even more difficult to attempt to offer a comprehensive analysis of her life since her reign as the Nigerian queer icon is just beginning. It seems to me, however, that to escape the possibility of misrepresenting her, one ought to accept the peril of speaking so little about a character who has said so much about her private life in the public domain. Bobrisky comes alive in the consequences of the contentions between the conservative elements of patriarchal Nigerian culture and the liberating forces of modernity and in the unification of these conflicting components into a risky whole. Indeed she acts as a mirror through which Nigerians can see themselves: a life of contradiction, brazen display of wealth, and the worship of money. Yet, she is a queer messiah who will call forth disciples of queerness.

Odunlade Adekola is a Nigerian actor, producer, director, and singer. He began his career in 1996 and rose to prominence in 2003, after playing a lead role in Asiri Gomina Wa. Since then, Odun has starred in numerous Yoruba movies and his dynamism has remained the talk of the town. Adekola is one of the few celebrities whose pictures are used for internet memes. He is also the CEO and founder of Odunlade Adekola Film Production (OAFP), a platform created in order to build prospective thespians.

Odunlade Adekola was born on December 31, 1976 in Abeokuta, Ogun State. Although he hails from Ekiti state, he was born and raised in Lafenwa, Abeokuta by Pastor and Deaconess Adekola. He grew up in a Christian family that is devoted to church activities.

For his formal education, he started at St. John’s Primary School and moved on to St. Peter’s College, Abeokuta.
