I wish I could like this 10 times

I am a small business owner, and I have been striving for success in my business. 
When I started, I was running the business all alone. As I began to make progress, I had to employ a staff member to oversee the day-to-day activities.

My first staff member I employed was a smart young girl. She worked with me for two years until she gained admission, and she would have my recommendation anytime and any day. 

The next employee I hired caused me so much evil that I never expected from her. She came through a recommendation from someone I hold with great esteem. She was cautious at first, but she eventually became a thief in business. I never thought she could do that because 
she has an innocent look.

Let me go into details on what she did. 
Around two months ago, she bought a smart phone on Easybuy. She used the phone to access loans from more than forty apps, and when to repay, she'll begin to use my money to make repayment to avoid the loan sharks' blackmail. 
It came to my notice the day I discovered we had a discripancy of over a hundred thousand naira. I had to stop her from working with me and inform the referees.

I later did an overall reconciliation of my records and I discovered she had already syphoned more than three hundred thousand, which I confronted her on without any objections. 

Her referee, mother, and husband prevailed over the matter and promised that she'd make a mutual undertaking to refund me. However, to my amazement, she has breached the undertaking without any plan to repay me. I have been careful because she's pregnant about how to recover my money from her, but she's showing reluctance to pay. 

I need your advice on the best approach to recover my money from her. I have proof of how she stole my money.
