Sorry beaf I dey sleep. grin

Ingredients:

Onions
Tomatoes (sliced or tin)
Concentrated tomatoes
Pepper
Oil
Rice
Knorr

Preparation:
- boil some rice on fire
- slice the onions, tomatoes and pepper.
- boil little oil and add some concentrated tomatoes according to your taste.
- I like my knorr to melt right in front of my eyes so I add it as soon as the oil is hot.
- Now put the sliced ingredients inside. Wait till everything mixes to your taste.
- Don't forget to put some salt.
- Take the rice off, wash it and put it inside your stew, adding some water. (In this case I avoid adding more salt because the stew does enough for the flavour)

Wait till your rice is cooked to your taste and VOILA, your jollof is ready! grin

This for those days you haven't got a large quantity of time at your hand and you just want to eat something fast but at the same time, delicious.

Yes its corn flour. You should be able to find it in African shops (I must say, I've never come across it in the UK). I also think you'll have better luck in your search if you call it pap or ogi.
You prepare and serve it exactly the way custard is prepared and served (both being cornflower).

Akanmu can be served with any of stewed beans, moin moin or akara (really depends on where your husband is from or your/his taste).

Akanmu is off-white with a slightly sour taste and has about the same consistency as custard.
Although everyone eats it, akanmu is used as a filling food by the poor. . . Could be the reason why your husband passes over the details.

ps. Tell us the "effects" of sheokoyokoto on your poor hubby when you've tried it grin

Good luck wink
Re: 10 Minute Nigerian Recipes by MissIfe(f): 4:09am On Jul 10, 2009
Thanks for those details! I thought Akamu was more like a thin porridge (without eggs) rather than custard. I only have regular corn flour here (not from african shop) so I guess it won't have this special sour taste, Does it come from fermentation?

I might be able to do something that my husband will like though wink

p.s.: what is the sheokoyokoto ? grin

Sheokoyokoto is as old as time.
It is a non-lethal weapon of last resort, primarily employed to deliver a pre-emptive and unshakable blow to ones love rivals.
A concoction of herbs and other sweetnesses that knock seven senses out of your man; leaving you as the drooling focus of his attentions, season in - season out.
It does not harm your foes, but will rattle your beloveds eyes back to front. grin

It is the meanest love portion.

No, it isn't custard at all. You are right akanmu is fermented corn flour, so normal flour won't cut it.
I've forgoten exactly how its made, but should be able to get back to you on that.
Re: 10 Minute Nigerian Recipes by MissIfe(f): 1:25am On Jul 11, 2009
aaah ok, love potion! I don't think we'll need that now  wink (though, maybe when he'll get tired of my "food experiences",  grin )

As for the akamu, I will wait for the details.

Thanks again!

So where are the various 10 minute naija meals? All I see is whether rice should be washed before cooking etc. C'mon lets see more recipes.
Re: 10 Minute Nigerian Recipes by Nobody: 7:43am On Jun 06, 2012
What of yam and vegetable?

I boil one yam and drain it once it's cooked and soft. Cover the pot to retain the heat. In a pan, heat up small red oil and some onion and allow them to saute (you can do this while the yam cooks to save time). Add the oil and onions to the pot of yam. Add a little spinach (or whichever greens you like), crawfish, ground pepper, and either maggi or salt to your desired taste. Heaven smiley
