Acha is a grain that can be converted into package cereal,it can also be processed into flour that will be serve as Custard. This same product can be processed as baby food . Acha has three variety in Nigeria, we have the white, black and brown. Our concern will be on the white and brown variety.
The importance of this crop
Acha ( fonio) is gluten free, this makes it better than wheat and corn which contains gluten. It also aids digestion by these it is good for babies, children and elderly people. It helps cardiovascular function and it is good for diabetes. It is very for weigh loss.
Processing of the Asha
Depending on which final product you want to get from acha(fonio) the processing of fonio is easy because one only needs to mill, sieve and this is where creativity comes into play.
