OP's rationale is that Muslims say they don't insult Jesus, but to we Christians (I don't care what they taught you or what you believe as a non Christian) Jesus is our GOD. Its an insult to our Jesus and our God to call Jesus a prophet .

calling Jesus Christ a prophet is never bad or blasphemy. Jesus Christ is truly a prophet and also a God and also the son of Almighty God.
problem is people dont know what prophets means. Prophets are people who prophesies(say things that will happen in future). prophesy is a gift and a spirit and a good gift and fruit and it belongs to God and comes from Him. Yes Jesus is God so calling Him a prophet is very correct, He prophesies too. but saying He is not the son of Almighty God is highly incorrect.
